Our experience here was pretty okay. We got the 1380 set, really enjoyed the first few courses— especially the sashimi. The dishes sort of went downhill from there, with 2 separate underwhelming rice dishes and a disappointing main (just lacking flavor). The dessert was a refreshing finish. Despite this, I still felt like it was a pretty good value.

We could barely hear our server, she practically whispered her explanations of dishes. We appreciated when the chefs would offer an introduction, but I could barely hear was the server was saying.

The restaurant was clean, not much to say for atmosphere. I was a bit put-off that they were playing like… movie...

Serving stunning highly flavourful dishes using Japanese techniques, integrating local and imported products and run by an energetic and welcoming team – this is a gem of an Yilan restaurant! I will definitely be back.

My complaints – the lighting is quite bright for an evening meal, can't pay with a card, and the dishes came out so fast that some were put down before the current ones were finished. With no reason to be so rushed, and dishes so flavourful, it’d be nice to not feel pressured to eat fast, and have a few minutes to savour the flavour...

I want to give 5 stars, but a restaurant with this kind of price range should be able to accept credit card. Other than that, the food was fantastic. They used a lot of fresh local ingredients, and take care of every little details on how the dishes should present. All the fishes for sashimi are unique and amazing, overall great experience.

全世界吃過美食不少,以前去紐約遊學還每天預約米其林週中午特餐優惠,去體驗各家餐廳怎麼裝潢、佈置、設計菜單、碗盤擺設、出菜順序跟邏輯、以及店員服務的周全,都在影響著品嚐美食時的整體感受。 在台灣,也吃過好多美食,但我真的覺得,只有RAW跟初物可以讓我每一季都想預約再吃一次師傅料理的藝術、美感跟季節好滋味! 我很慶幸宜蘭有這麼一位日本習藝十年的師傅,林師傅對日本的熟悉,對食材處理的手法跟細心度,都會讓我思念曾經在日本求學的生活體驗跟日系職人的細膩度。他更發揮宜蘭女婿的在地優勢,和RAW主廚Andre一樣,常在宜蘭大溪漁港和各種農家出沒,為的就是用最新鮮的食材做創作,幻化食材變成一場藝術饗宴。這次秋蟹季節,獨家船隻通路獲得日本空運來宜蘭的松葉蟹,體型沒有帝王蟹大,但肉質是無敵甜美高級的口感,其蟹膏透過林師傅的巧手,變成兩道讓我吃了忍不住一直「哇~~~」激動的料理,也太好吃了吧我的天! 為何RAW跟初物在我心中是同一等級的饗宴主要有兩個點,第一個就是吃料理時,一般餐廳會將重點放在「主菜」,其他配菜的擺盤、滋味似乎就稍顯黯淡,高級餐廳則有一些重點放在豪華裝潢、高檔食材、強調某個東西有多貴又有多貴,而我欣賞的則是RAW跟初物能將一般市場我們也能取得的食材,變成料理藝術品,這才是讓我覺得最屌的地方!舉宜蘭的櫻桃鴨來說,RAW江主廚曾經把櫻桃鴨切薄片,佐以當季的芒果跟小黃瓜做成伊比利火腿包哈密瓜的吃法,超級有創意,我請教他為何能將櫻桃鴨的口感處理的這麼好,他也不吝分享給我他在宜蘭找到的獨家鴨農!而林師傅則將櫻桃鴨搭配芝麻葉跟特殊醬料,變成一道超級清爽跟開胃的前菜,開啟我們的味蕾,迫不及待期待著接續的上菜,真的是高明啊。 再來打中我心的是RAW跟初物的套餐出菜順序跟食物的組合安排是有劇本的,有鋪陳、有緩衝、來一次味蕾高潮、再歇息、安插個小創意驚喜、然後再衝一次味蕾高潮、之後甜而不膩的甜點收尾。期間搭配的氣泡水、水、酒、茶也都是師傅想過要怎麼搭配食材味道而給的,這讓吃飯變得非常有趣,視覺、味覺、聽覺、嗅覺都滿足時,就會被其中的藝術跟用心感動,心裡烙下了美味的印記💛 感謝林師傅的手藝招待,忍不住又寫了一篇紀錄我的欣賞,分享給更多人一起認識料理藝術的美好🥳🥂🙌🏻 一定要先預約才吃得到哦,若要預約松葉蟹特餐4個人吃份量剛好🥰😋 #初物 #宜蘭
