see, there are chefs who cook, and then there are chefs who transform the act of carving into a performance. Damo is most certainly the latter. As he approached the carving station with the gammon glistening under the warm glow of the kitchen lights, there was a certain elegance in his movements, almost like watching a sculptor delicately shape his masterpiece. Each precise slice was an intimate momentâlike he was cutting through layers of history, tradition, and flavor.
The gammon itself was a work of perfection. It had been roasted to that perfect, golden crispiness on the outside, with the meat inside so tender that it practically whispered as you took your first bite. But it was Damoâs knife skillsâhis care in every motionâthat elevated it to something extraordinary. With each precise, confident cut, the gammon revealed itself, each slice a revelation of perfectly marbled meat, tender and juicy with just the right amount of smoky sweetness.
Watching him carve was mesmerizing; it wasnât just foodâit was a performance of precision and respect for the ingredients. He wasnât just serving up a plate of meat; he was serving up a masterpiece that had been crafted with intention and expertise. The whole experience felt almost like a ritual, where the carving was an offering of something uniquely crafted, something to be revered.
And then, of course, the taste. The gammon was rich without being overwhelming, smoky without being too bold. The glaze was sweet and savory in all the right proportions, complementing the natural flavors of the meat perfectly. You could taste the love and care that went into it, from the first crack of the crispy skin to the last tender bite. Damo didnât just carve the gammon; he elevated it to something transcendent.
Now, letâs talk about the drink that accompanied this masterpiece: Pepsi. I love Pepsi. Thereâs just something about the crisp, refreshing sweetness that pairs perfectly with a rich meal like this. Every sip was like a cool breeze after a warm embrace. Itâs the perfect match for the gammonâcutting through the richness and leaving you feeling refreshed, ready for the next bite.
But what truly made the experience unforgettable was the kindness of Tegan, who served us at the bar. From the moment we sat down, she made sure everything was nothing short of perfect. She wasnât just serving drinksâshe was making sure our entire experience was wonderful. She checked in on us regularly, ensuring our food was just as we liked and that we had everything we needed to fully enjoy the evening. Her warmth and genuine care created an atmosphere that felt personal, not transactional, which made the whole night feel special. She was the kind of person who made you feel like you were the only ones there, even though the place was buzzing with energy.
Tegan went out of her way to offer recommendations, make small talk that felt like a real conversation, and just generally make sure we were having the best time possible. Itâs rare to encounter service that feels so heartfelt, and her kindness really set the tone for an evening that was both delicious and memorable.
By the time my plate was set before me, I was already in aweânot just of the food, but of the craftsmanship that went into creating it. Chef Damoâs carving, Teganâs thoughtful service, and a perfectly paired Pepsi made the entire experience feel like an indulgence for all the senses.
The Cavary, with its impeccable food, incredible staff, and thoughtful details, is truly a place you donât want to miss. And if youâre lucky enough to have Tegan serving you, youâre in for a treatânot just in food, but in...
Read moreMy wife and I booked for a meal at 4pm as we had to be somewhere else for 6pm and we have always had a good experience here with food and staff, even defended the restaurant to people who spoke badly of their food and staff. We arrived a few minutes before our booked time and were politely greeted and shown to our reserved table. Sitting at the table next to us was a young man on his own. Within a couple of minutes my wife and I kept getting a horrible unwashed stale smell and it was coming from the man on the table next to us, we quietly asked the manager if we could be moved to another table as sitting eating with this smell around us was going to be sickly. The manager went along with our request and without causing any disruption, she said that we had been given the wrong table and would we mind moving, which we thought was very diplomatic of her. We were moved to another table and thought nothing more of it, until we saw the young man get up from where he was sitting and head off into the staff area behind the bar. This concerned us both as it could mean he is kitchen staff, so we asked the manager if the man we were moved away from was staff and she said no and that they get people come in wanting to watch sport on the tv but they don't put sport here, but when she realised that it was possible he was seen going through the staff doors the manager suddenly changed what she had told us that he is a cleaner out the back, we expressed our concern that he was in fact kitchen staff and the manager assured us that he wasn't and mentioned another staff member who was the chef. Feeling a little uneasy, but assured by the manager, we waited for our starters to come out. The starters were brought to our table by a very polite young lady and we enjoyed our starters, although we did both notice that when we had got to the bottom of the metal dishes that our food was in, they both had the ceramic coating flaking off and had rusty metal showing where the coating once was. We didn't mention this as we just wanted to eat our meals and leave. Our main courses were then brought to us by a chef, which has never happened before as there were serving staff wandering around. I took this to be the evidence of the manager telling us that the man we were moved away from wasn't the chef and so we relaxed and enjoyed our main courses. Before leaving, both myself and my wife needed to use the bathroom and as I walked passed the carvery counter, the doors to the kitchen were open and to my horror, I saw the man we were assured was just a cleaner in a full chefs outfit carrying food, the one thing we wanted to be assured of that he wasn't dealing with ours or any else's food. So to summarise, we were lied too and they are allowing people to work in their kitchen who clearly has a problem with hygiene. The man in question, although was wearing a chefs has to cover his hair, he had quite a large scruffy beard which I was always under the impression should also be covered but wasn't. This situation is so disappointing as i have already said, we have always defended this restaurant, especially when this new manager took over, as she really turned the place around, but it seems now things have slipped. With this, we have decided to never eat here again and use other local...
Read moreAbsolutely appalling. After being told were our table was and that it would be wiped clean ( of which never happened ) Ordered our meals at the bar, 2 out of the 5 had starters as their main meal of which I clearly stated when ordering, these are to be served with the rest of the food as they are having this as their main meal. Ordered drinks, 1 out of the 3 Pepsi max was end of the bag so tasted awfull which was rectified. The starters Ordered ( as main meals ) arrived so I then went and got my carvery assuming the rest of the meals were on their way arriving back at the table the 2 'starters ' that arrived were not as ordered ( asked for no chive sprinkling , chives were present on both meals, the soup was taken back as my mother cannot Eat chives, 2 minutes later it arrived back, clearly with the chives being scraped / strained off as soup was not hot and bits of chive were still present ( she did not eat this but we were refunded the 3.99 )and the rest of the meals had not arrived. ... 5 .minutes later, still no further meals had arrived. Spoke to lady at the bar who checked and returned stating the meals would be with us in 2-3 minutes.... 10 minutes later they arrived. Myself, my mother ( who could not eat the soup ) and my daughter had finished our meals by the time my father & sons meals arrived. We came out for a family meal, not expecting to all be eating at different times!!! A member of staff came over and asked if she could get my mother something different to which we had all had enough of the terrible service and just wanted to leave. Upon mentioning about the soup again we were told that's how it comes, it's tomato & basil, it's how it's made!! Basil isn't even mentioned on the menu so how she came up with that excuse is beyond me. So we shall not be returning, 3.99 refunded for the soup is patronising, we were all disgusted by the service we...
