But Pizza in the Skye—yes, the food truck tucked into the rugged beauty of the Isle of Skye—blew me away. This is not “good for Scotland” pizza. This is legitimately fabulous pizza, full stop. The crust is blistered just right, chewy with that perfect wood-fired char. The toppings are fresh, flavorful, and thoughtfully composed. Dough was raw in the middle, probably because he didn't preheat the oven so that the base of the oven is hot enough to cook the dough.
Dough seems overfermented as it has a strange aftertaste, it may have some sugar in it or too much yeast, not true neapolitan style pizza, should watch some videos of italians making true neapolitan pizza. But at least he remembered to ferment the dough for at least one day.
Dough cooked unevenly he should find the right spot in the oven to cook it evenly and check how it cooks.
Couldn't feel the taste of the sauce on the pizza, he should've used peeled plum tomatoes preferably from an Italian source that is approved for neapolitan pizza (use hands or vegetable mill to crush tomatoes ).

The pizza was nicely cooked and the toppings had a great taste. Perfect amount of toppings too. The garlic bread and bruschetta were incredible as well. We both thought that this was one, if not the best pizza experiences we ever had (special taste). Not only was the food good but the owner also seems to really love what he does. Was up for a chat and friendly from the first second to the last. We definitely didn't expect this experience when we saw a foodtruck on a parking space but recommend everyone who loves pizza and good service to give this a try.
