September 2022 Either there are far too many people that do not know good barbecue, or I happened to catch them on a bad weekend at a festival. I tried the brisket sandwich with beans and mac-n-cheese at the Brandywine Battle weekend, and it was the worst barbecue I have ever had in Pennsylvania. The brisket was very dry and too tough to even chew, and the roll was stale. The barbecue sauce was the most bland I can ever recall getting anywhere. The beans had absolutely no taste and you can tell they came straight from a can, and the mac-n-cheese was very gelatinous with dried chunks of cheese, also with no taste. And I paid $15 for this caricature of food. I didn’t finish anything. Just a terrible excuse for barbecue. The brisket was pulled and not sliced and had absolutely no fat marbled in, which is why it’s such a dry mess. I was born and raised in the north but spent over 20 years throughout the south, including Texas, and this establishment is barbecue done by someone without a clue, with patrons who also need to get a taste of Kansas City, Dallas, or Memphis to see what they are missing. There are gas stations in rural Texas that serve up 5-star barbecue.
I don't like giving 1-star reviews, but this one definitely deserves it. And something else you should take note about reviews here. If you notice, the majority of the 5-star reviews come from people who have only reviewed this place or very few others, and the reviews are extremely short and offer up very similar wording. We live 20 minutes away and stopped in to pick up lunch and take home on a Friday. We first fell in love with great BBQ that raised the bar high when we were vacationing in North Carolina years ago. We seldom find great BBQ in Eastern PA. I’m raising my flag today to proclaim that HillBilly BBQ is legitimately GREAT BBQ! The best roadside BBQ we’ve ever had. Since it was our first time, we got a small sampling of several things including pulled pork, beef brisket, cole slaw, potato salad, and baked beans. We also each got a beef brisket taco, along with a container, each, of their sweet and hot sauces. Everything was absolutely on point and exceeded our high expectations! The meat has a perfect amount of smoke, is juicy and tender and amazing. This is definitely the best brisket we have ever had. As great as the sauces are, we found ourselves not wanting to put them on the brisket because every single bite is just that melt-in-your-mouth savory spectacular! The cole slaw is exactly as we like it, course cut with a creamy and tangy sauce. The beans and potato salad are excellent. The gentlemen inside was very kind and conversive. Read morePassed this place dozens of times over many years and was always curious, so I stopped in. They are located in the corner of D&S Elite customer builders. I always saw and smelled the great smoke as well as the cars lined up for the mid day lunch rush.

I've driven past in the 6-7am range and was surprised they were already open and had customers. When I visited I stopped close to 630 am and they were serving breakfast sandwiches.
I got the jalapeno sausage, egg and brisket egg on rolls. Both were fantastic.
The brisket was moist and not overly chewy. It had a rich smoked flavor that was not overpowering. The sandwich was loaded with meat yet was easy to get down with no mess.
I LOVED the jalapeno sausage. I could not do it justice by describing it. It's a must try and I'd order that every time I stop in.
I talked to the owner JR. He is a good dude. He answered questions about catering my work party (I've since booked him) and supplying a whole Bone-in, smoked ham and turkey breast for another event I have planned. The prices for such bookings are very fair considering the quality of the food you get.
Hillbilly BBQ has phenomenal word of mouth withing a 30 mile radius. Once I bragged about going there to peers, family, friend..... everyone.... had something positive to say about their own experience and or what they've heard from others.
If you have ever driven by and wonder, just make the stop. You will be glad you did.
