Totally stopped by on a whim 'cause we saw the Honduran food truck. My husband's Honduran, and, since omfort food's a must for our "self-care", baleadas were in order. Now, being of the Mexican variety myself, and in constant search of the best taco (pronounced ta-ko not taa-cou) in Austin, I naturally gravitated to the Mexican food truck across the way.
