I was on my own for dinner this evening and I've never been to Easton's heirloom restaurant blue, so I decided to treat myself to dinner. I'll open with this, your bar service is phenomenal! Even with service tickets flowing, all four friendly bartenders interacted with me. I even got a little help from their astutley aware barback. A red blend, Elizabeth Rose Chockablock, was suggested confidently. I love a dry red with medium to light body and it was delicious. Now on to my meal selection. It was an unseasonably HOT day and I was craving a refreshing meal, so I focused on the salad menu and chose a chopped salad, which if done right, is a satisfying textural experience with layers of flavor. However, the blue Chopped Salad was not prepared with pride. When the salad was presented I was immediately disappointed. The generous amount of romaine lettuce was haphazzardly slopped on the plate and about to fall off one side. At first glance, it looked like a basic salad of romaine tossed in creamy dressing, topped with fried onions and one egg, plus the two grilled shrimp I added on for $11. That's it. Basic. Sometimes we can't judge a book by its cover, but with the blue Chopped Salad, you can. Basic presentation gave way to basic flavor. A green godess dressing should taste of herbs, especially tarragon, but it's distinct flavor was missing. The one note dressing simply tasted tangy. The 'crunchy' fried onion topping was cold, stale, and chewy. I pushed it aside. The one hard boiled egg was awkwardly positioned, like it begrudgingly came to the party and wasnt treated, it was naked at the party! The best part of my meal were the juicy grilled shrimp. As I ate, hiding in all the dressing, were sugar cube sized bites of mozzarella. It's one of the most mild cheeses in the world of cheese and it couldn't stand up to the bacon. You'll save on food cost if you leave out the mozzarella. It wouldn't be missed, trust me. But truly, all I could taste was bacon because there were copious amounts of the tiny smoky crumbles tossed with the dressing and it invaded every single bite! As I ate I craved acid. My tongue cried, "Tomatoes please!" I expected a more successful dish from a restaurant that has cultivated a family legacy of successful restaurants in the Lehigh Valley. With warmer days ahead, up your salad game. Unfortunately, I was 100% unimpressed by the first thing I've eaten at blue but was warmly welcomed by your bartenders, so I'll be back to see them and maybe try an entree, like duck or short ribs. But remember, a salad can be a showstopper too!

I used the reservation feature right on Google maps which was very easy. I did this about 3 days in advance because I didn't know if it would be packed on Friday nights. I had missed a call from the restaurant early in the day before our reservation and they left me a voice-mail going over a few quick things such as the outdoor seating is 1st come, 1st serve. When we arrived, I would estimate the outdoor area was about 80% full, I cannot speak on interior seating as it is well-seperated from the front entrance. The atmosphere was exactly what I was hoping for, subtle music, mature patrons, no distractions. The staff was very professional, not overbearing and not unavailable, just the right amount of service. Our food was fantastic, the appetizer was delicious, the main courses range pretty widely in price but there are great options for everyone. We ordered 1 side along with 2 entrées which was plenty for the both of us. When I requested the dessert menu, our waiter confirmed that my note in our reservation about our birthdays was correct and then he offered to bring us a complimentary ice cream cake slice. Needless to say, it was gigantic and we loved it. The waiters boxed up our leftovers, including the appetizer which we really appreciated. It was a perfect 1st visit and made for some special memories. Pricing wise, I really expected to pay around $150-$200, you GF did forget her ID so we only had lemonade but our total bill was $99. Very affordable for such high quality service and product. We will definitely be coming back here.

Keep in mind, I didn’t have all this food and it includes the opinions of the people I went with lol I can’t eat that much. The vegetable ragu penne was mixed with the perfect vodka sauce. The oysters were chewy and soft at the same time. The 14oz ribeye had tons of flavor and it was super savory. The cajun chicken breast came with a storm of vegetable hash and smoked andouille that was to die for - perhaps reminiscent of New Orleans-style street cooking. The mashed potatoes are also EXTREMELY smooth. Overall, the quality of the food here is impossible to ignore. To our experience, Blue is now the exemplary upscale Lehigh Valley restaurant. Justin Q was our server and he did a wonderful job. He was calm, cool, and attentive. The ambiance is luxurious and sophisticated, the lighting is fantastic with small candles all over, the aisles are tactfully and uniquely laid out, and the details of service are impeccable - everything from the way they hand you the silverware and the fact that they give you more than one set to the blue uniforms the servers wear. It all made for an experience that separates itself from the restaurant’s competitors, the closest of which, debatably, actually being owned by the same restaurant group (like Melt, Top Cut, Torre, etc.)

Keep in mind, I didn’t have all this food and it includes the opinions of the people I went with lol I can’t eat that much. The vegetable ragu penne was mixed with the perfect vodka sauce. The oysters were chewy and soft at the same time. The 14oz ribeye had tons of flavor and it was super savory. The cajun chicken breast came with a storm of vegetable hash and smoked andouille that was to die for - perhaps reminiscent of New Orleans-style street cooking. The mashed potatoes are also EXTREMELY smooth. Overall, the quality of the food here is impossible to ignore. To our experience, Blue is now the exemplary upscale Lehigh Valley restaurant. First we had an815 reservation. We were running a few minutes late so I called n told the host we would b ten minutes late. She then made sure I'm aware that they only allow a 15 minute grace period n after that she's not responsible for what happens to our table. Then we got there at 825 like I said n they made us wait till after 840 to b seated. So much for that reservation . Only annoying because she was arrogant when pointing out the grace period. I said nothing. Next waiter kept screwing up our order. Then a young lady came by and asked if she could take anything. I said no she then said would you like me to take this. I said ok fine but that's it. I then continued to try to eat my apps. She then asked if she could take my wings while I was chewing them! I said no nothing else please. She then asked if she could take the bread I again said no. I'm eating it. She then asked again I finally said can u please go away n stop trying to take our food while we r eating it. Then the waiter comes back .after waiting a good 15 mi uses for my daughter's Salas dressing I say can u please get her another Shirley temple woth extra cherry syrup. Also can u please refill my drink but please use the same glass no more ice just coke n extra lemon please. He comes back with a Shirley with less syrup the. The first time and a new drink with no ice. I say listen man if I took the time to give u specifics on how I want my food or drinks it means it matters you've been ignoring everything we've said . It's driving me nuts. I was stern but didn't raise my voice at all. He was hovering over me as I spoke. I then said listen I'm not trying to be a jersey I don't want to b mean n itip well. Its just important certain things r the way I want them or it ruins the meal. He said okn apprently while he was standing over me touched his elbow. I dont recall but my wife said ot was at the end whenu were trying to be nice . Then the manager comes over clearly annoyed also and says wasthete a problem with ur drink etc. I said yes as well as 5 other things but I spoke to the waiter. If anything as much as noone like anyone complaining I did. Him a favor . The he says that igrabbedthe waiter. I was likewhat?no didn't even raise my voice? I apologized explained I wasn't trying to intimidate him. I wasn't even mad just annoyed he kept screwing up. They then sent over a different waiter . She was good. I then asked her to please let him know I apologized I gave nonemory of e en touching him bur I matu have touched his elbow by mistake as he was close to me but it was purely accidental. Mind you I'm there with my wife 13 ye old son. N 11 yr old daughter. We finished our meal . Left a 65 dollar Ripon a 225 dollar meal n agiain ex pressed our apologies . As we walked out the manager comes over and says I spoke to our gm n after what u did your not allowed to co.e here any more. I live 3 hours from this place n besides the food was average n service sucked . We wouldn't be back . Now I'm getting annoyed but the ridiculousness of it has me trying to defend myself and telling the manageri already told u if I touched his elbow it was an accident he made some snotty remark n then I told him. To go" wellyou know "himself. As wellas a few morethings.which he then responded in kind. I just left at that point. Having a cursin g match with a littlesissy boy is going toget me nowhere. But that's what happened at blue grill house. Was I wrong if I touched his elbow wile trying to make up with the waiter be cause he looked nervous I guess . But I never grabbed him I certainly never grabbed him out of anger and the service an treatment was terrible anyways. Poorly handled by them over something so utterly...

I booked the Blue Grillhouse for my son’s wedding rehearsal dinner. The website showed a lovely restaurant and menu. Once in touch with events planning, both Gina and Isabelle were very helpful. However; the things I was told I’d get and what I actually got were quite different. I had 26 people coming and it was decided that the best option was a limited menu. It included salad, main course, dessert and coffee. The menu I received said the price averaged $75 per person *all inclusive. I asked if all inclusive meant tax and gratuity and was told it did. It certainly did not. According to my bill the food average was $71 but tax and gratuity were added separately. That average came out to be $100 per person. In describing the room we’d be in as I picked the color of napkins, Gina explained how lovely that would look with the fireplace. I also was traveling some distance and did not want to carry centerpieces. I was assured there would be candles. When I arrived the room looked stark. No fireplace and 3 little votives on each table. It looked like a business meeting and I was embarrassed. We had asked to have some food put out upon our guests arrival. We were torn between appetizers or hors d ‘oeuvres. Again I was told that there would be plenty of food by ordering 4 hors d’ oeuvres selections. We ran out quickly. The presentation of the food left a lot to be desired. I have since realized that if each person had ordered an individual appetizer, it would have cost the same and been a much better option. I did tell Gina that I was unhappy about the amount of food put out and she tried to rectify it by putting out a bit more. I decided on an open bar which was a big mistake based on the prices I was charged, like $16.50 for a half full glass of wine. NYC prices in Pennsylvania??? The food and again the presentation were not what I expected. My crabcakes were extremely salty, the ceasar salad dressing was good but the croutons were stale. Anyone who ordered filet mignon got a tiny piece of steak on a huge plate with parsley on top! The sides were presented as family style. It would have been nicer if those who ordered steak got the sides on the plate. When I was presented with the check it was $1000. more than I had anticipated. I spoke with Gina again and asked why tax and gratuity were not included in the package. She told me that it was not supposed to be, which is contrary to what I was told on the phone. The gratuity was almost $600 for 2 waiters! If I have to say something nice it would be that the cheesecake for dessert was very good but they must have run out of chocolate mousse cake because 2 different types were served at my table. All in all I was extremely disappointed. I don’t mind paying top dollar for gourmet food, service and ambiance. I feel like I didn’t get any of that and was drastically overcharged. I will not be returning to the Blue...

I have no earthly clue how a restaurant that is gorgeous, both inside and out who has an amazing front of the house staff and has been established as a fine dining restaurant in the Lehigh Valley for years can serve mediocre, at best food. Blue’s website touts a “Perfect Situation” ….not so much. First off, a huge shout out to our waiter Stefan, who couldn’t have been more attentive, knowledgeable about the food and drink and professional. He made our experience enjoyable, the food on the other hand… Our party of 4 dined at Blue on 1/13, (hoping that no one will cite this as the reason). We started off with the Calamari and Haloumi appetizers. Never have I ever had Calamari served with a barbeque sauce…and the tomato sauce, was just that, a very pedestrian marinara. The menu states that the calamari was supposed to be honey-glazed…nope, just dry, fried calamari, which was good but we have had the same quality at restaurants that don’t tout the fine dining, aka, pricey tag. The Haloumi was dry and hard, resembling burnt toast, may I suggest just a drizzle of a little something, something, olive oil, balsamic glaze, like I do at home? The addition of a spritz goes a long way. Next came our entrees. I love duck, so when I see it on a menu I generally order this. Another of our party also ordered the duck, his medium and mine medium rare. One would think that we both ordered it well done because despite the appearance of medium, medium-rare, both were as tough as shoe leather and rather tasteless. The confit/brussel sprout mix that the pieces of duck were laid across was fabulous, though, so well done on that piece of the dish. The plate also came with what the menu described as a dried apricot compote. Not sure what cookbook the kitchen was working out of but our plates were half covered in what appeared to be apricot jelly, I took a picture as I seriously couldn’t make this up. My husband ordered one of the specials which was a Jambalaya, supposedly with U-20 shrimp, (not so much) and chicken. The dish was so-so, but nothing like one would expect at a restaurant of the Blue’s caliber. The last order was salmon, my friend ALWAYS orders salmon so she knows good salmon…again, nothing out of the ordinary. We had been to Madeleine’s a few weeks back and their salmon was to die for. So for friends who love to cook, knows good food and look forward to going out to eat to be wowed by something we wouldn’t normally cook at home, this experience was not what we were hoping for. Again, Wait Staff, Outstanding, especially Stefan; Atmosphere, Enchanting and Inviting; Food, fell so far from what one would expect given the quality of the front of the house staff and atmosphere. Bottom line…try...
