This is by far the best and most accesible BBQ that the beautiful state of Indiana has to offer. It only took 1 hour and 40 minutes to get this delectable smoked and pulled pork into my hands. The woman who worked the counter was so friendly and encouraging especially to foreign children wondering why their order was taking 1 hour and 10 minutes. Not to mention that when eating this fine food there was not more than an ounce of meat on my bun. Talk about exclusive! I heard the reason why it took so long for so little meat was because you have to wait another hour to get the full amount of meat. They even pushed me out of my comfort zone by giving me potato salad when I ordered coleslaw. The man working the kitchen was going to far lengths to create this masterpiece. Every fry was hand fried, seasoned and perfected one at a time. The water was hand tapped from the glaciers of Fiji, and they had to commute there on foot. Read moreSmokiness and spiciness of the meat and bbq sauce itself were phenomenal. Good to have BBQ in town that focuses a lot less on a sweet sauce. Brisket was a tiny bit chewy for me, but I know some prefer it that way. The sides were fantastic. Baked beans and coleslaw just like grandma made (tasting the rice wine vinegar in a Sweet Cole Slaw took me back in time)
It's also cool to see more folks trying out the concept of a commissary kitchen, and I think that's worth supporting. I'm happy to give this a try over a chain any day.
