We have had Dinner during the opening week of the restaurant. We sat at the Bar. The service was good and the food was ok. We decided to give Pasta Masters another chance. We Dined on Jone 26. We walked in at 6pm just after Happy Hour. Only 3 tables were seated and no one was sitting at the Bar. We ordered drinks and the Bartender couldn’t find the Wine that I ordered. We ordered Appetizers. The appetizers sat in the Expo window for 10 min. The Owner was sitting on the prep table next to the server station. I watched the owner get up and ask the team members in the back of the house to come and run the food. So the owner can’t even help run the food to his guests, that is sitting in the expo window dying. Bad Business but it gets worse. We asked the Bartender about the person sitting on the prep table. She stated that it was the owner Matt and he does it all the time. After the appetizers were delivered he went back to sitting on the Service station prep table. We asked the Bartender to ask him not to sit on the table. This is a health code violation. He looked at us and started laughing. And then he grabbed his TOGO food that was being prepared and walked right by us, and left, and didn’t say a word. At this time the Bartender also had a plate of food behind the Bar and she was eating between making drinks. Never saw her wash her hands. Also eating behind the bar is a direct violation of Health Code standards. Her plate was collecting flies. Our Entrees were still being prepared because the Owners TOGO food took priority over his patrons food. Let me remind you there were only 3 tables seated in the restaurant. Very slow. Our food was then delivered and the pasta that my Wife ordered came out with a Garnish of Green Onions. She is highly allergic to green onions. Nowhere on the menu did it list green onions. At this point we were so disappointed that we decided to leave. The bartender comped the entire meal because the experience was so bad. Matt This is probably some of the reasons that you aren’t one of the Owners at Cotton Calf anymore. In my 32 years of Restaurant Mgt I have never had an Owner/Manager/Employee sit on a prep table especially during service. Very unprofessional. Matt you need to remember this is all your fault. Atmosphere- the space is nicely decorated with light, neutral colors and beautiful mitered quartz countertops that make the space feel light and airy. The open kitchen and windows along the hallway that allow viewing access to the behind-the-scenes goings on of what is happening backstage make for a certain transparency that makes the whole experience feel honest and authentic. Also, bathrooms were spotless.
Food- we started with the burrata (sp?) and pesto, and the olives with fresh baked focaccia bread. Both of which were great. You could really pick out each ingredient in the pesto and the bread that came with the olives was perfectly fluffy while also crunchy on the outside as good focaccia should be. I had the lasagna that was an absolute explosion of flavor, a well balanced symphony of filling cheese, mushrooms, and white sauce topped with a lemony crust that brought a brightness to the whole dish and made it feel light while also filling. Wife had the spaghetti that i’m told was very good (high praise as she comes from an Italian family and that is her favorite meal). My friend has the cacio e pepe that i tried, in truth it left alot to be desired. No peppery flavor and not nearly enough pecorino.
Service- sunshine was amazing even though they were shot staffed. Very pleasant and attentive, out glasses were never more than half full.Food came quickly after ordering. Appetizers came out with plenty of time to eat them before the entree arrived (a pet peeve of mine, hate when it all just comes out together).
Price- everything was extremely reasonable, $10-$20 a plate, which definitely will cater well to the younger middle class families moving to our community.

It is a small dining room. They were nearly full when we came with only a couple of servers.
They have a small menu which they supplement with specials. Our server never informed us of the specials. I only knew they had other items bc I saw other people getting it. Salads came out sand time as entree. Caesar salad had no dressing. Had to ask another server for more dressing bc ours was MIA.
The pasta is fresh and homemade but sauce was soooo bland! We had to put a ton of salt on everything. I got the bolognese and it was flavorless. My son got the crab pasta and it had zero flavor. Kept waiting for our server to come around so we could ask for some sauce to make his pasta edible. Also, I wanted Parmesan cheese for my pasta. Watched her for 10 minutes hang out in the back of the restaurant on her phone. Finally I had to WALK to her and ask for some cheese and alfredo sauce bc his pasta was so dry and flavorless. She argued with me over it. After I returned to my seat she brought me 2 things of grated Parmesan cheese (like the kind in the green can). My husband had to jump in and beg for sauce. Afterwards, the server went to gossip with the bartenders. Once she was done gossiping, she FINALLY went to ask the cook for the sauce. They brought some Alfredo sauce and it was actually amazing. Unfortunately, at that point everything took so long and was riddled with controversy that my son was pretty much done. I couldn't finish my food bc of all the conflict with the waitress.
