It's very hard to find a Midwest Mexican restaurant that doesn't use the same tired menu all the others use. El Potro has managed to be the exception. Nestled on the corner of a small, sleepy, downtown street of Edinburgh, IN, El Potro might be easily missed, if not for the reserved flair of pictures of horses (personally owned by one of the co-owners, who just happen to be cousins) in the windows. You first walk in and, as a first-time guest, you're surprised by the energy of the patrons and staff alike. Nobody is exceptionally loud, but the buzz is almost like a family get-together during the holidays. You're seated, then presented with the ever-present chips and salsa. You begrudgingly take a bite, then pause, scoop more salsa, and you're taste buds explode with flavor. This isn't no mama casa salsa the others use. This salsa hints of roasted poblano, green chili's, and other smoky, earthy, just spicy enough to tingle, notes of deliciousness. I'm not afraid to say that I was tempted to lick the bowl clean. Don't go here as a couple unless you want to spend 60+ dollars on poor quality food and service.
