We were directed to Las Enchiladas by a friend who was originally from Mexico who told us that "this place is different - everything's made from scratch". Sounded good to me. We tried it and really loved the place. It's pretty small, but, at least when we've been there for lunch, it hasn't been crowded (yet).
The service was very friendly - good knowledge of the menu and even some stories about some of the dishes (the mole sauce and the flan were both "Grandma's recipe"). Chips and salsa are brought out - originally just the (above) standard "mild" salsa, which was very good, but when we mentioned we liked spicy foods, the waiter brought out a fiery green salsa, and an even fierier arbol chile salsa that were both really good, if you enjoy heat.
We've been there several times, and have loved all the dishes we've tried. My wife's favorite is the Enchiladas Verde - chicken and cheese enchiladas with a very fresh-tasting green chili sauce over the top - you can really taste the tomatillos and the green chile kick. My favorite so far is the mole enchiladas - chicken and cheese again, but with a different-from-all-the-other-places red mole over the top. The mole is hard to describe (as most good moles are) - but you can tell it's got all kinds of spices in it, and with just a tinge of sweetness (which the waiter did warn me about). Personally, I thought it added just the right amount of interest to the dish - balances out the chiles and other spices in the sauce.
I've also tried the alambres al pastor (it wasn't on the menu, but they can make it, since they've got the al pastor meat for tacos already). Pork (with all those wonderful al pastor spices), bacon, onions, peppers, grilled together, and then covered in melted Oaxaca cheese and served with tortillas. Sooooo good.
We even tried grandma's flan once. The waiter told us it was not Mexican or Spanish-style (I want to say Guatemalen, but I'm not sure), but it was slightly creamier than most flan - even leaning a little toward cheesecake - very dense with a great flavor, and served with whipped cream to kind of cut the richness just a little.
All in all, a great little Mexican restaurant - we've definitely put it in our...
Read moreWe stopped in for lunch today and boy were we pleasantly surprised; the food was excellent! My daughter has special-needs and struggles with certain food. We greatly appreciated their flexibility in accommodating those needs by creating an enchilada dish that would work for her. Of course, I had to do my fatherly duty and sample her food to make sure it wasn't too spicy, or poisoned... Ok that's not true, I just wanted to taste it; man, it was good! My better-half ordered the fish tacos. Of course I had to do my husbandly duty and taste these as well. I was surprised as to how fresh and insanely delicious they were. I ordered the Tacos Al Pastor with a side of rice and beans. Like everything else we were served, these were also really good. My only critique is that the Tacos Al Pastor needs something added to it to lift the flavor of filling past the slightly over-powering corn tortilla. Don't get me wrong, it was really good and I'm not unhappy at all - I just think there is a way to make it better. That being that issue, for lack of a better term is not worthy of lowering my opinion of this restaurant.
In conclusion, Las Enchilladas is a hidden gem of Mexican restaurant and the Farmington/Rosemount area is lucky to have it! We will...

If you eat here you will never enjoy Mexican food from other restaurants again. Whenever you think about eating somewhere else in the back of your mind you'll be saying "but I could eat at Las Enchiladas". Your wife will leave you because anything she cooks will pale in comparison to what you could order here, and you won't be smart enough to not tell her to her face. You will spend all of your paychecks on their delicious Enchiladas Verdes or Burritos. If you come between 2-6 for their BoGo margaritas you're in trouble. You'll drink those until you physically can't anymore. Trust me, I've been there. The staff might be the nicest people I've ever encountered. You'll wonder how someone in the food industry could be so nice. Surely it must be a facade? It's not! They actually love their jobs and I'm so jealous of them. Eating here is a slippery slope that can only end poorly.
You've...
