UPDATE: Ok, we've been back a few times and just wanted to say I rolled in a month ago with a big order and I just kept adding stuff. I get home and bacon jalapenos are missing...honestly, I didn't check and like I said I just kept adding stuff :-) I sort of blew it off and figured I'll roll in next time and mention it. Hour later, credit untion notices says my account has a credit. On their own, they caught it and refunded the item. Wow, that's top shelf.
Last visit, 16 August, I had the brisket sandwich and honestly I think I would club a bag of baby seals for one of these. Ok, maybe not baby seals, but toy seals that weren't being used by kids. Seriously, great stuff and of course I had smoked devil egg and jalopeno popper... I'm going to get so fat from this place.
Wow! Ok, BBQ is a personal thing and everyone has different tastes in how they like it, sauces, sides, etc. For me, this is a winner on everything we tried. Growing up in Texas, brisket is king and their brisket is great. I’d love a titch more seasoning on the bark but honestly it was literally the best brisket I've had since Texas. I've tried a lot of BBQ places in Virginia and Maryland, they are good, just not great. Again, it's all subjective but for me this will make me come back.
I over ordered because we couldn't decide what NOT to try...well we got the pulled pork sandwich, dry and moist brisket, jalapeno biscuit, coleslaw, beans, potato salad, mud pie, pickled onions, stuff jalapenos, candied jalapenos, and a dark cherry and root beer soda. I know I know, don't judge me until you've gone, I know I went too far :-) In fairness the candied jalapenos were a bonus from David :-) See, we had balance.
Everything was fantastic, no regrets except I'll be napping after this review. We took a bunch home except I killed the pound of brisket without missing a beat. I love their potato salad with the mustard and hint of spicey. Coleslaw is kind of of traditional pulled pork sandwich slaw, I could use a bit more dressing but I just kept eating it because it was good. That jalapeno biscuit/bread is nuts good. Super dense so you're thinking there's no way I can eat more than a bite or two...half a biscuit later you're just adding some butter and you’ll stop listening to your inner voice to stop.

Read moreWe stopped in here on a Saturday evening to get carryout. The service was fantastic and everyone was super nice and enthusiastic.
We ordered some pulled port, brisket, pork belly, potato salad, coleslaw, and baked beans.
We also took a small amount of each of the available sauces.
The pulled pork left a lot to be desired in terms of flavor. It was not dry, but it had almost no smoke flavor at all, to the point I was unsure if it had actually been smoked to begin with. The brisket was similar in that the texture and moistness was fine, but it lacked any real flavor, it was simply cooked meat with a hint of smoke. The pork belly however was fantastic with a great consistency and deep smoke flavor.
For the sides, the slaw was the star, nearly perfect for a slaw. The same cannot be said for the potato salad which had the potatoes a bit under cooked. The baked beans were good, but the flavor was overpowering them clash with just about everything.
The sauces were about 50/50 in terms of great/ok, but each person will likely prefer different ones than we did.
Price wise this was not cheap. At $19.75 a pound for pulled pork it is almost worth it for me to git a few shoulders and smoke them myself. But the real kicker was $12 for a (what appears to be) 16oz container (the Large) of coleslaw. That is cabbage and carrots with dressing not saffron encrusted lobster.
Overall the consensus is that it is just OK. We were hoping to find a local BBQ place, but are unsure if Waylon's is it.
Suggestions to the owners: Put your menu above the order line, it is hard to have to turn your back on the checkout. Offer a platter with selections of the meats/sides, sticker shock for the individual items is real Offer more plain options such as plain beans and rice or cornbread without jalapenos. This is, hands down, the best BBQ in the FXBG area. Every item served is scratch made.
I've tried the ribs, pulled pork, brisket, and even the smoked baloney sandwich. All of the meats have been delightfully smokey, but not overwhelming. Of note, the brisket was extremely juicy - kind of the litmus test for a BBQ place. If they get brisket right, almost everything is going to be good.
The sauces are all made in house, and the ones I've tasted have been great. The sides, also made in house, are also pretty good. You'll see some familiar items, but often prepared with a unique twist - they'll either hit for you, or miss, depending on your personal tastes, but they are all well made.
The desserts rotate frequently - I had a slice of the Strawberry Chocolate pie when it was available, and it was out of sight!
There store itself is pretty small, with only about 5 tables, but it is very clean. The staff is friendly and engaging - it's so nice to see people engaged in something they're passionate about. Keep a close eye on the menu board - it's constantly in flux with items that either sell out, or are re-added as the kitchen staff catches up with demand.
In short, I think I'm done with all of the other local places - for BBQ, Wild Waylon's is now "the one" for me.
Edited to add: Some people have mentioned / complained about the prices. I get that it may seem high, but if you go watch some Youtube videos showing the amount of time and attention it takes to make great BBQ, you'll understand where the money is going.
