Definitely excited to have a wood fired pizza place nearby again! I have always hunted down wood fired, coal fired pizza while traveling. The pizza and cheese bread were good. Its seems like yall use semolina flour to help with the pizza peel. Can I suggest cornmeal?! It does require more cleanup in the oven, but gives a slight sweet taste and a bit pop.
