We went here for lunch and ordered three bowls of Ramen noodles and a shrimp tempura. First, the tempura is not an authentic tempura - it is sweetened and probably an altered version to cater to Americanized tastes. But, tempura was just an appetizer for us so I can let that go (better if they can serve authentic Japanese tempura in the future). Now let me talk about the main dishes we ordered: the Ramen noodles we ordered are Tonkotsu black (#1 on the menu), Tonkotsu spicy (#2) and shoyu ramen. As a ramen connoisseur, I have eaten the best ramen in Tokyo, Osaka, Okinawa, Hong Kong, New York, Atlanta. Nori's ramen is not quite at the top level yet, but comparing to other Ramen places in Birmingham and Tuscaloosa, it is probably within the top two. On an absolute scale, I'd rank it as very good (with excellent being the top, very good being the next slot down). Things that are done well: the noodles' firmness is just right (we tried the thin noodles only), the broth is thick, rich and flavorful, the chashu is flavorful and melts in your mouth, the portion in one bowl is good. Things that can be improved: (1) the broth is just a tiny bit too salty. (2) There are only a handful of customers when we were there at around 1:30pm, with only one table of customers eating hibachi. However, the air smells oily and the floor is sticky as well. My suggestions are: (1) the broth can just be just a little less salty + the taste profile of the broth can be not only rich (which it already is), but actually more complex, then the noodles can be closer to perfection. (2) Better air circulation and ventilation. If these aspects can be incorporated, this restaurant has the potential to be serving the best ramen in the greater Birmingham area!
