Blue Sky Bistro is one of those businesses I feel conflicted writing a review for. 100% for selfish reasons. Because I love it so much I want to keep it a secret. But I gotta hand it to them. They are located in the Rocky Mountain Metropolitan Airport. I'm a poor medical student and will probably never fly/own a plane or private jet or whatever they have here, so if it weren't for Yelp, I would have never come across this gem. For how absolutely random and unassuming it is, their food is stellar (and pretty fairly priced!). I tried the warm turkey pesto panini with the apple salad as my side. Both were absolutely delicious! Portion sizes were generous and the meat was moist and well-seasoned. My friend got a bbq plate (apparently their specialty and only offered certain days of the week). It had a great variety and somehow tasted amazing while still tasting kinda healthy (definitely not like the sodium bomb sauce-drenched Texas bbq I'm used to). We sat up on the 2nd floor and watched the planes take off. The vibe indoors is kinda sterile... it feels like an old office building waiting room, with a random vending machine in the corner. It would be kinda nice if they revamped it and turned it into a more put-together airport lounge style area. But this is an airport after all, and you go for the views, not the interior. We happened to be there on a cloudier day, and it was still gorgeous. But if it had been a bluebird day, you'd have a crystal clear view of the entire Front Range. On warmer days, they'll set up patio seating outside. I'll definitely be back in the summer! Blue Sky Bistro is a perfect place to meet up with a friend to catch up, go on a casual yet unique date, or just grub some legit lunch. There's plenty of parking right outside and it's pretty easily accessible from US-36. Aside from the amazing views and the stellar food, the people working here are so crazy nice, it's unbelievable. The lady who took our order at the register made great food recommendations and was extremely patient with my indecisiveness. She later came by to check on us and ask if enjoyed everything, and then when we stepped outside to check out the planes, she was out folding linens and warmly told us more about the business and how they have spaces for corporate events, and how the outdoor seating is truly splendid in the summer. (P.S. How does she do everything?!) She also reminded my friend to get a refill on her drink before leaving. As we stepped back inside, another couple of employees smiled and asked if we enjoyed our lunch and also reminded my friend to refill her drink on her way out, haha. Colorado hospitality is the best-- it makes my heart smile. I hope Blue Sky Bistro is here to stay forever and ever. Can't wait to come back and bring...
Read morePleasantly surprised by this little tucked away airport restaurant. Food here is soooo good, and our medium sized order came out rather quickly. French onion soup had a surprisingly layered palate, not at all lacking ingredient. Brisket grilled cheese had the perfect cheese to meat ratio, not overly cheesy, and not just a brisket sandwich with cheese.
Cocktails ( espresso martini/gin&juice) were tasty & nicely balanced, especially for the price. Great craft canned beer selection, fresh coffee as well as cold brews.
Don’t miss out on the huge, tree-shaded patio here! Super kid/dog friendly and amazing view of take offs with the mountains in the distance. Corn hole and plenty of space for the kiddos to relieve the zooms.
Also nice to watch the smoker smokin fresh bbq out back on the patio!
Staff is calm and friendly. Really can’t run out of enough good things to say about this place!
Planned on going to Chop shop down the road but decided on trying this out last minute and we absolutely couldn’t be more satisfied with that decision. We’re literally raging about it and already plan on coming back!
I’ll update this if I ever find a con with this place but for...
Read moreBlue Sky Bistro is a four-and-a-half star establishment in my opinion, but I'll have to round up here. I thoroughly enjoy the Wednesday barbecue options with their fresh made salads and prepped fruits. When it is not a barbecue day at Blue Sky, I'm usually there for a quick morning omelette or sandwich on days that I miss the alarm clock. A bonus for anyone with kids, or someone who wants a low key hideaway to get some work done, is that you can order your food here and then have a seat in the terminal building and they will bring the food out to you whether you are on the first floor or second floor. There are plenty mid- to large-sized tables in this terminal building so you should be able to find seating. Good views of the runway and taxiing aircraft also keep the kids distracted enough for you to enjoy...
