Miranda's Mexican Food Truck — Restaurant in Kansas City

This is the best taco truck in any City! Having traveled the United States for work over the last decade. I always track down the best tacos during my time in each city. This gourmet truck is the cleanest inside and out that I’ve ever seen. The service was beyond amazing. Very warm and inviting energy like you were getting fed by Mom at home. She on her way to bring me my order ‘to a very clean non sticky picnic style table under a canopy btw’ with a smile on her face. She brought me the freshest homemade green and red sauces I’ve ever seen/tasted on a tray with lots of napkins ‘your gonna need those later’ then came my two plates of food ‘which surprised me’ a whole plate half of the best flavored and textured rice and half of flavorful beans. ‘XL portion sizes in todays dining experience’ another plate with 4 tacos. Onions and cilantro Garnished on the side by request. I ordered pastor tacos. Let’s start at the base of the taco. the tortilla. delicate, thin, not too thin, fluffy, perfectly soft/crunchy. Perfection! The pastor meat was perfectly seasoned not too salty but vibrantly full of flavor. The onion and cilantro was so brightly colored you could see the freshness immediately. The onion was diced like a professional chef would. The dice size was purposely smaller than the meat chunks ‘to not over power the flavors from the meat and tortilla “owners explanation when asked” all of these elements paired together was absolutely blissful. I closed my eyes after the second bite. Rule is You don’t close your eyes while eating good food like this because it will be stolen off your plate by a family member or friend lol Food was very quickly prepared and hot. Truly plated with care! I couldn’t be more pleased with my experience. I used to live in San Diego/Tijuana for quite a few years and spent a lot of time all over Mexico. Miranda's is the only Mexican food I will eat in the entire KC area and the best tacos this far north of the border. I love as spicy as possible and their red hot sauce is perfect and plenty hot but doesn't over power the taste of the food yet the spice lingers after eating it and I absolutely love it. I also can't forget to mention how great the customer service is and how nice the owner is. He remembers me & my order every time my wife & I go there(I'm the no veggies on my carne asada & pollo tacos guy). I always get an extra order of tacos to eat the next day. If I could give it more than 5 stars I would. So I'm here to emphasize this is 10 star Mexican food!! If you disagree I'm willing to fight you over...

Love this place! The formula is simple: a food truck with a permanent location. But the result is great!

The owners are very friendly, and I appreciate that they remember me and greet me warmly, even if it's been a while. The decor and amenities have steadily improved over the years, and it is so interesting and a bit whimsical. They have a fountain and fans and hand sanitizer and a hand washing station. Even on a very hot day, it's enjoyable to sit out there.

The food is very good. The tacos (and surprisingly the french fries) keep me coming back for more. I have tried them all, and each time I go, I have a hard time choosing. I want one of everything. And while they aren't on the menu, if you ask for veggie tacos, you can get those too.
