Nestled in the historic depths of the iconic St. Edward’s Lodge, The Tonsorium Bar is much more than just a watering hole—it's a captivating journey through time paired with world-class food and drink. Let’s start with the bites because, oh, what bites they are! The burger isn’t just the best I’ve had in years—it’s a meaty love letter to culinary excellence. The chicken burger? Absolute perfection—it left all other chicken burgers in its dust. And then, the Brussels sprouts—normally not on my radar—have completely won me over. They’re smoky, crispy, and downright addictive, proving this kitchen knows how to make even the humblest of vegetables a star.
But the evening doesn’t end there. Lynsey, the Tonsorium’s mixologist extraordinaire, is the perfect embodiment of this place’s charm. Her cocktails are masterpieces in a glass—bold, inventive, and impossibly smooth. Watching her work is pure theater, a whirlwind of energy as dazzling and fleeting as a bug on a windshield (her endearing chaos just adds to the entertainment!). She brings a vibrant, lively spark to the space that complements its historic backdrop beautifully.
The Tonsorium, housed in what was once the seminary’s barbershop, is a seamless blend of past and present. As part of the meticulously restored St. Edward’s Lodge—a landmark that has evolved from seminary to state park to its current role as a Pacific Northwest-inspired lodge—its Romanesque Revival architecture and Art Deco details create an ambiance that is refined yet cozy. The preservation efforts by Daniels Real Estate are nothing short of incredible, and the adaptive reuse of spaces, like transforming dorms into guest rooms and barbershops into bars, speaks volumes about their vision.
Whether you’re here for the jaw-dropping food, the innovative cocktails, or the chance to soak in a piece of history with a side of Lynsey’s unforgettable charm, The Tonsorium is an absolute must-visit. It’s not just a bar; it’s an experience that leaves you planning your next visit before...

Read moreI love this bar. It's such a cool piece of history. Nestled in the "basement" of recently renovated old seminary, The Lodge at St Edwards Park, this bar used to be where the priests would receive their hair cuts.
The seminary stood empty and boarded up for decades, probably closer to a century if I remember correctly, but has been beautifully renovated and has regular rotating art displays down the main corridors. So you can have a drink then roam the hallways and enjoy the art.
The rotating draft beer choices are great and at a decent price for such a nice venue, which is what I usually drink there, but on the occasion we've had cocktails, those have been great too. The food is great too. But even more than that, the service has always been superb.
I hesitate posting this review because it's rarely very busy and I like having my quiet little getaway that few know about, but they've earned the...
