I’ll start by saying the ramen itself is decent. The chashu was unfortunately cut with the grain and left it very chewy. The miso is supposed to be served with thick noodles but I received thin. But the restaurant is new so those are easy mistakes. Overall the soup was good and I came back with my kids. The third time I tried to order to go ramen on Father’s Day and the experience was pretty poor. I tried to order the ramen with the noodles uncooked, so I’m able to cook and eat them at home and eat them immediately while fresh. The employee was very confused by the request on the phone so I tried driving to the store and explain in person. He still seemed confused and spoke in Spanish to the cook in the back and when he came back out he said they were unable to do that. I asked if the owner was there, and it being Father’s Day, they were not. I left disappointed and reached out on IG to see if it was policy or just a confused employee. I was asked to explain the situation and replied quickly only to be left on read for over an hour. I reached out again and was told it was policy and in the future I could request the noodles be cooked for 5 seconds. Which seems to be a worse option than letting me cook them myself, as soaking them briefly in hot water would only make them slightly mushy and clump together. Not once was I offered any sort of apology in any way for it being Father’s Day and our dinner plans derailed, policy or not it’s usually just polite to do. Unfortunately with every other ramen restaurant in the area offering uncooked noodles to go, and the other owners being very friendly and seem to care a little more about their patrons, I’ll have to take my business elsewhere. We had an amazing meal at Umami Ramen in Lincoln, and it completely exceeded our expectations. Whether you’re a meat-lover or plant-based, this place delivers big on flavor and quality.
We tried both the Vegan Ramen and the Pork Ramen, and each bowl was exceptional in its own way. The vegan broth was rich, savory, and full of depth — something that’s surprisingly hard to find. It came loaded with fresh veggies, tofu, and perfectly cooked noodles. The Pork Ramen, on the other hand, was decadent and deeply satisfying, with tender slices of pork, a rich and creamy broth, and all the classic fixings done right.
To start, we shared the gyoza and edamame — both were spot on. The gyoza were crispy and flavorful, clearly made with care, and the edamame had just the right amount of salt and heat (we went with the spicy version and loved it!).
The service was fast and friendly, and the space had a chill, welcoming vibe that made us want to hang out a little longer. You can tell the team here really cares about the food and the customer experience.

Read moreI've been to the both Umami Ramen restaurants in both Lincoln and Folsom many times. They both provide excellent, delicious tonkatsu (pork broth) ramen soup. Their Tonkatsu and Black Garlic Tonkatsu ramen are bursting with pork broth flavor and easily comparable with better ramen shops in Japan. It has a very bold taste that's quite similar to that of the renowned Nagi Ramen in the South Bay.
The bowls are quite large and easily get me full.
