I asked around for suggestions for the best pizza in Milwaukee. An overwhelming number of responses said Hup's.
I do not know what I was expecting when I pulled up, but it wasnt Hup's. It's a tiny shack on a corner lot with almost no parking. It reminds me of some small BBQ joints I remember living in the south. There is a waiting "room" where you order, it's pretty much just a doorway. The menu is bare bones-- two sizes of pizza, optional toppings, garlic bread, cheese bread. They only accept cash.
I ordered a large pepperoni pizza with double sausage and cheese bread. I was told "come back in 30 minutes".
I returned 25 minutes later, in case the pizza was ready early. The waiting, um, closet was packed with a half dozen people waiting for their pizza. Young, old, black, white. When I explained (standing that close everyone becomes your new best friend) that it was my first time, I was universally told that I would love it and would be back ASAP. One older gentleman had driven from an hour away just to get pizza. He said he used to work there decades ago.
My pizza may have been done early, I'll never know, as it took 10 minutes or so to work through the line in the waiting room.
First thing I tried was the cheese bread. It was exactly what you'd home cheese bread to be-- tons of butter, garlic, and melted cheese on fresh bread, still soft but crispy around the edges. My only issue is that it did not include marinara or any sort of dipping sauce. Next time I will ask.
The pizza. Easiest way to lose me on a pizza is to use subpar sausage. The sausage they use is GREAT. The other toppings (pepperoni, cheese, sauce, etc) also taste quality. The cheese looked a little burnt but in fact was perfect. The crust is a little too crispy for my taste, but not overdone. My only real complaint about the pizza-- THEY DIDNT CUT IT. What?! I dont live in Milwaukee so I wasnt in a position to go home, cut, serve and eat it. I ended up ripping it into pieces.

On the NW side of Milwaukee, your other choices are pretty much the Dominos, Papa Johns, etc crap pizzas, so I was glad to find Hup's! Now, don't expect much in the way of "friendly" customer service, they never sound too thrilled to take your order and when you come to pick up, if its not busy you may stand at the little window for a few minutes while the cooks in the back see you standing there and just ignore you, but eventually someone will come up and get your pizza for you, its just how they do it there! Yet, I'd rather put up with Hup's grumpy service and kind of dumpy looking little building they're in BUT leave with an awesome tasting pizza than go to one of the pizza chains and maybe get slightly friendlier service (although they aren't that great at those places either!) and go home with a crappy tasting pizza to eat!
If "Hup" could get his service to be a little friendlier and keep the pizza tasting as good as it does, he might really start selling a lot of pizzas. (but if you drive past on a Saturday night, maybe between 7 and 10pm, you'll see a line going out the door anyway, so maybe Hup...

It's simple dictionary definition pizza. Cheese, sauce, onion, pepperoni, sausage, green pepper, mushrooms, and anchovies- that's it- and it's sooo good! The crust is perfect, not too thin, not too thick- perfect. It's the littlest building you've ever seen, with the littlest waiting area ever....I don't even think I could get a picture, all you would see is the opposite wall or the little order window.- it's the same as it's been since I was a kid... probably since my dad was a kid...and maybe even his dad! It's a little 5'x5' waiting area with people huddled together waiting for Milwaukee's best. Cash is King... mostly because they don't take cards! So don't show up without it and look like a newbie! And trust me- the nearest ATM ain't pretty...
