Ridiculously remarkable flavorful & clear broth!!! We've tried phổ all over the island and from CA to FL, & this is easily the most memorable bowl ever. It has sOo much aroma and sweet flavor of the meat & spices used. We were wildly impressed, especially in such a relaxed & beautiful setting.
Menu is very limited- there's only phổ (seafood, combo, thinly sliced steak) or Viet style banh mi avail, but that explains why its so well made- the chef focuses on getting it right. He was sadly out of basil (we were tempted to pick some from the pot between the trucks, but leaves were tiny), which we love to pile on, but seriously- the liquid was so good, didn't even want to put hoisin in. It only needed some sriracha and was magnificent. Our 1.5 y.o actually loved the tendon & tripe in the combination bowl, while the 4 y.o ate all the meatballs. Brisket was perfectly tender and cut nicely. Too bad they don't offer xe lửa size bowls! (Wish i could bring my own bowl for a fill haha B.Y.O.Bowl to the next level 😂)
There's plently of picnic tables surrounded by lovely landscape, grassy area for possible picnics, a garden of herbs, lemongrass, flowers and a nice view of the waterside or lush green mountains.
Chef was awesome & even brought the food out to us on a nice round tray, which is very smart for the mess soup can make w/LOs. My lil love loved his soup sO much that he walked up to the truck & hugged it afterwards. Nothing better than good food for the soul that kids approve of.

As a person of Vietnamese heritage and a huge lover of pho, I was a bit skeptical at first when I heard about this place. I mean, pho from a food truck? Never heard of that before!
Oh how could I have been more wrong with my skepticism.
The pho had a fantastic aroma. Different than your average bowl of pho, but not in a bad way. The soup was clear but still had a strong and unique fatty flavor. The beef balls were nice and tender, and the rest of the meats were cooked perfectly (except for the rare beef, which cooked in the soup).
The banh mi was also very tasty. It was missing some classic spreads, notably bretel butter and paté, but made up for it with its unique meat choices.
All in all, if you're looking for a quick bite down the highway, take a pit stop at Pho Vientiane! Very tasty food and the soup is fantastic for a food truck!

So I assume the lady that made these is Laotian. I love everything in the plate: the broth, meat, meatballs, and even the veggies. The summer rolls were also really good because they were fresh with a really good peanut sauce (not the typical peanut Thai sauce). It’s way better. The quantity is so much. One bowl for two people. Unless you eat a lot lol. I couldn’t finish the pho and put it in the fridge for four days. It was still good after I reheated it. I would definitely go back again.
