While waiting for my car to be smogged (like the DMV, the wait can be forever sometimes even on weekdays) I noticed a taco truck right next door in the same complex. I figured why not try out a new taco joint while I wait. The prices are fair to the portions you get. The quality of the food is excellent. I liked the friendly service, (I forgot to get the girl's name who helped take my order) but she was very friendly and even checked on the patrons outside to make sure we had everything we needed while we ate outside. What really stood out to me aside from the excellent food, was the ambiance. This isn't your normal taco truck setting, they really took the time to set up shop. First, the menu is printed on the outside of the truck and big enough for people to see (even without glasses). For the newer generation, there is a QR code you can look up the menu on your phone. I must be getting old (I am only 35 lol) cause as I was taking a picture of the menu, the girl who helped me take my order taught me something new with my phone- simply just taking a picture of the QR code will bring up the link to follow to the menu. (I thought I had to have the Barcode app to scan barcodes) anyhow, that was cool. Back to the review- There is plenty of outdoor seating available and some with umbrella shades. Nice tables set up with hand sanitizers. For an extra dazzling effect that makes this taco set up stand out from others is that they have artificial turf (The roll out grass I am unsure if it's called turf) that makes it feel like your eating in a "tropical-ish" environment and not next to a smog place. That is a really nice touch. The music was on point too, random music genres but the reggaeton was my preferred music and made my 2 hour smog wait bearable. I will definitely visit again after this initial visit. Gaby Tacos is a small family-owned Mexican food truck that’s known for their tacos and quesadillas. BUT, they’re also one of the best spots for tortas and they have great burritos too!
I recommend their Cubana torta , shrimp quesadilla , milanesa torta, Marca Diablo Burrito, and anything with al pastor or even their fish tacos with their yummy green sauce.
They’ve got a shaded canopy with patio seating in front that can accommodate couples or family groups. They also have heaters to keep warm.
The one con to their location is the street traffic noise, but they do have their music playing and it gives off a nice “Cabo street dining” vibe.
You’ll also have to use the restroom next door at the Smog Station.
They also don’t sell alcohol. But they have excellent Agua Frescas & horchata!

As others have mentioned, when one goes to a food truck you typically don’t get too many comments about the ambiance… but their setup is amazing!! Definitely not your typical food truck with comfy seats, heat lamps and bistro lights. I sat outside and enjoyed my food with minimal plastic under a beautiful palm tree.
Got the asada burrito. It was spiced very well and had generous amounts of the most important ingredients (meat and guacamole) and didn’t just throw a bunch of filler in there while definitely not skipping beans and rice entirely. The show stoppers were the salsas. I’ll be honest, I judge every Mexican dish on its salsas/sauces first and everything else second… and these did not disappoint!!! Tried 3 of them and each brought their own party to my mouth. Will definitely be back!
