The quality of the food has been consistently great year after year, and the selection of both food and beverages is fantastic. If you're hoping to grab a drink at the bar, make sure to arrive early as it's first come, first serve. However, if you prefer table seating, reservations are a must. Our favorite at Apex is their chicken schnitzel, which has never disappointed. However, on this occasion, I decided to try something new and ordered the prosciutto cotto tartine. It was delicious! For dessert, I highly recommend the profiterole. It's humongous and has a rich chocolate flavor that is absolutely decadent. Overall, I highly recommend Apex Restaurant for lunch. The food is consistently great, the selection is impressive, and the atmosphere is welcoming. Don't miss out on the chance to try their amazing prosciutto cotto tartine and indulgent profiterole! My husband and I came here not really knowing what to expect, but we were blown away! The building/atmosphere is incredible. The trees are all lit up outside, the dining area is stunning, the view is spectacular, and that's all before we even get to the food itself. Our server (shout out to Lindsey!) was phenomenal. She took great care of us - checking in frequently and ensuring our experience was top tier. We ordered the wagyu (A5 and filet mignon) for our main entrees and it was hands down the best steak we have ever eaten. Don't skip out on the duck appetizer though. And the DESSERTS. They have an executive pastry chef and it shows. We had the firepit (creme brulee) and the conifer and both were out of this world fantastic in addition to being works of art.

My husband and I came here not really knowing what to expect, but we were blown away! The building/atmosphere is incredible. We have been skiing at Deer Valley for over 20 years and have been dining at Apex and the other restraunts at The Montage since soon after it opened. In the past it was a dining experience that we looked forward to with high quality food, varied selection choices and an impeccable wait staff. Unfortunately this is no longer the case. Over the last 2 years the menu selection has dwindled to about 1/2 of what the previous offerings were, the highly professional wait staff has left and the furnishings have been downgraded to something that looks more like seating from a Holiday Inn Express! On our visit yesterday the visit started with the wait staff being pushy and not atuned to the table vibe. We were discussing the menu, drinks etc and as we still had our menus open and were talking the waitress interrupted us several times after we had already said that we would need a few minutes. After we decided on the smash burger the waitress wanted to argue with me about how I specified that I wanted it prepared. Food came out with a very weak presentation. Plate had ketchup but no other condiments such as mustard or mayo provided. Salt and pepper grinders wer e not on our table, had to take them off the adjacent empty table. As we were eating and chatting we were interrupted repeatedly to ask were we done,could they take our plates when it was fairly obvious we were still eating. When it was time for the check, the staff that had not been willing to leave us alone was now nowhere to be found and when they did walk by looked away not acknowledging us. When we finally did get the attention of our waitress I asked to speak to a manager. Luis, a manager, came out to speak with us and apologized. He stated that guest certainly should expect a 5 star dining experience at the Montage and blamed not having dedicated staff and training issues as the cause of the problem. He stated that if we returned another day that he would make certain that the experience was more what one would expect from a 5 star facility. Imagine my surprise when I received the check, (after discussing all the shortcomings of the staff, food and atmosphere) to see no courtesy adjustment or gift card inviting us back or anything else that would typically be provided in high end dining establishments when you had made management aware of a sub par experience. We pulled Luis back out and chatted with him again. At this point he comped the food items. It is sad that the Apex/Bourbons & Burgers are no longer good dining options. I would definately go elsewhere for a pleasant fine dining experience. This was the third strike here for us. VERY dissappointed

Addendum: I received a response from Mr Vasseur the F&B Director for Montage stating that "If I had contacted them prior to placing the review...." Mr Vasseur, Did you actually read my review?? I spoke with Luis not once but twice. The first time I spoke with hime I told him I intended to post a review and it was up to him how that review would look. Instead of taking responsibility he blame shifted and did nothing to show that the Montage/Apex cared about us as guests. For a Hotel that is on par cost wise with the Ritz Carlton Your customer service is sadly lacking and your attention to detail (as evidenced by your response to my review that shows you really didn't read what I wrote or speak with Luis about our interactions) is poor. An unfortunate $600 brunch on Christmas Day. First of all, Apex should not be considered a fine dining restaurant by any means. It all started with the host who answered my phone call a couple of weeks ago, she informed me brunch on Christmas Day would be $150/person, wrong I corrected her explaining brunch was $95 and dinner was $150, I shouldn't know this information better than someone who works there and takes reservations. She put me on hold, and came back apologizing, stating I was right. Moving on, I ask her for availability and she confirms it, and I proceed to make the reservation when suddenly she asks me if I am a guest, I say no, and she refuses to take the reservation because "it is only for hotel guests" ( It is not the first time we dine at the Montage, we are locals), I ask to speak to a manager and at the end they proceed and take my reservation.

-Yesterday, Christmas Day we get sat at an okay table, the server was nice at the beginning, later on she just didn't care to show up to our table (of course gratuity was already included, but I will get there too.) Didn't provide us with any Beverage Menu. We order coffees, she takes our orders wrong. We did not complaint at that point. We asked her 3 times to bring an ice bucket for our champagne bottle ($50 corkage) eventually one of the managers did it for her, since she wasn't even around our table. There were lots of server assistants around nobody would clear our plates, they were just busy talking to each other, we had lots on the table since it was a buffet (food was meh, just okay). Eventually someone cleared our plates, but never brought back any silverware, and then, here we are with food in front of us without utensils. The server Brigitte was still missing. At this point it was just upsetting and we go look for Brigitte, find her and ask for the check. She drops the check with 20% gratuity on it and that was the cherry on top... my sister goes looking for her again and gives her the check with the cards. Meanwhile I decide to look for manager and explain why she should've not included the gratuity, he agrees and removes it. We did believe her service was not worth the 20%. ( The 4 of us work in the industry, and we understand the service we need to provide in order to earn that 20%) we ended up tipping her 13%.

We were expecting a nice Christmas Day experience considering it is the Montage... We will not return.

This was my first time at Apex Steak and it was such a great experience! The food tasted amazing and the presentation was impeccable. The sourdough bread loaf was crispy on the outside and soft in the middle. Melted in my mouth with the honey butter. The Empire salad had interesting and unique flavors and was a refreshing start to the meal. We also had the filet and lobster, both absolutely delicious. The mac and cheese was good, but probably the least exciting part of the meal. The asparagus au gratin was delightful. Then just when we thought it couldn't get any better, the desserts arrived and they were out of this world! My wife and I shared a creme brûlée and chocolate conifer - they both looked incredible and tasted even better. One of the best meals I've had in a long time!

Oh, and our server Dillon was so great. He knew everything about every single dish and made fantastic recommendations. He had just the right balance of sophistication and warmth. Everyone else was friendly and...
