Tried this place today and totally impressed. The staff made great recommendations on tacos to try. They also suggested I only get two because they were large tacos but I didn’t listen and got three. I tried the root beer carnita which was delightful and had a good portion of meat to other taco ratio. Also tried the spiciest of their tacos the blueberry biscuit which was a wonderful mix of spicy ( but not too spicy) heat with the contrast of a sweet blueberry flavor. The meat was fine to perfection and had a nice smoky flavor. The third I tried was true barbecue chicken and this was a delightful thing. Had delicious crispy onions on top with a tapatio ketchup. Wonderful. The tortillas were also perfect in size, consistency and did not fall apart while eating. The vegetables were also fresh and crisp. A plus thank you! Will be back again soon.

We had an incredible lunch at Westside Taco Co yesterday—first time there and we’ll be regulars! The Hub and I ordered the chipotle chicken and the Austin barbecue chicken and both were super good. I adore these types of fusion-y taco places that make such spectacularly tasty food (and now have an alternative to El Sancho here in Redmond, yay! And unlike El Sancho tachos, which are snack-sized so you have to order several to fill up, these tacos are built on delicious house-made corn tortillas and feel more like an actual meal.) The pickled onions on top were awesome as well. Staff were very friendly and happy to see us—that always feels good—and we were so happy to see them. AMAZING tacos, unique and creative menu—you can’t go wrong! 💘💜💞

Why aren't you eating here? You've had the most popular tacos in town and maybe you've tried a few of the small guys but it's time for a change. Once you've had Westside tacos, almost everything else is disappointing. The best taco in Central Oregon belongs to the blueberry Chipotle brisket. Hands down my favorite. Another great taco to try is the Austin BBQ, the root beer carnitas, and the chicken poblano. All of the tacos were purposely crafted not only for visual appeal up for flavor profiles that will blow your mind. While you're there make sure to grab a beer, can't have tacos without them.

Consistent high quality, creative offerings at an affordable price point. Nothing like it in Redmond. My favorite is the Blueberry Brisket. Amber is an accomplished Chef soon to open (March) her own restaurant in Redmond just 2 blocks NE of the Vault.

We arrived at the Vault/Westside Taco hungry after not being served at Carnaval, through no fault of our own. A laughable lack of professionalism from Carnaval staff. We were seated at the last available table which had a severe wobble to it. Asked our served to level it. He made a minimal attempt solving nothing and walked away without comment. We perused the menu.......then waited and waited.......The guy who would have been our server walked by without saying anything. Did we upset you??? LOL

We left without ordering as it became clear we were not important enough to serve. I guess they have enough business to not serve people here and there. We ended up having a much less expensive and delicious lunch at the Vault/Westside Taco!

Westside Taco 5 stars! Check out her new restaurant coming soon! It will be a lower cost alternative to "Carnival" but with a much more broad menu. Chef plans to change the...

Have eaten here a few times just to see if it gets better. Yeah this review is a bit harsh, but when you see a place that has 4.8 stars and 100s of reviews that drastically misses expectations, I think some balance is needed.

The tacos are $6-$7 each which first off is crazy, but forgivable if they're like, the best tacos ever--and if you only need 2 of them for a meal. Nope. The tortillas are homemade but bland. You need at least 3 tacos for a light meal (e.g. A min of $18 for a meal) or 4 of you're hungry. And to top it off they are just not great tacos.

I've also tried the "loaded" zuchinni fries. I regret not taking a picture. Picture nice, golden, flour battered zuchinni with a drizzle of crema, a sprinkling of cilantro, and a dusting (literally a dusting) of cotija cheese. There's nothing loaded about these. $14. That's exactly 2x the amount I'd pay for these, now that I know...
