Ok so this place is personally my favorite Mexican restaurant !!! They have great Barbacoa!!! The Texas plate is by far my #1 plate of all time rn !! This place has showed me that they care about their customers and the food they make! they have a top of the line kitchen & equipment!! something you'd see in a high-end restaurant for sure!! See they didn't start off like that they started off in a way smaller building and over time the owner took the proceeds and invested it right back into the business making it 10x better!! (unlike the rest) Inside is great there's a bar they have TV's playing it's always clean !! I see a lot of businesses that been here so long but never do anything in comparison to make the customer's experience better the way Guadalajara's has !! These businesses run there buildings to the ground been here 30+ years and never even poured a penny into the building or kitchen or anything sometimes you go and the ac is out just terrible!! They Care about the money and that's it! None of these restaurants care more about the customer then Guadalajara's! And guess what??? I'ma say it their carne Guisada is way better then Hi Ho's!!! Literally!! The Texas plate is smoking anything from there you must try for yourself I highly recommend!!! They also offer fresh made chips when you dine in that are great!! Salsa is good, green sauce is excellent 👌!! They have great daily specials for $5.99 aswell.This place is definitely the best in Calallen !! The cleanest !! I won't go anywhere else...

A good, popular, and well talked about Resturant is important to everyone involved. Especially to the owners of the establishment. That is why most of it's regular customers feel That "CONSISTANCY" is Important. Serving "Fresh Food" and meats must be priority in any food establishment. For example; we enjoy eating Barbacoa taquitos at Guadalajara on 624. Northwest blvd. We are regular customers. Half the time the meat usually look's and taste fresh, and we enjoy it alot. But sometimes the BBQ meat is so bad, old looking, not fresh and meat looks whitish and awful. This inconsistency can, and has driven customers away. I had even recommended this Guadalajara Resturant to another Mexican Resturant owner. I ask him to go try the good BBQ at Guadalajara, but my visit there tonight and ordering a BBQ taquitos was embarrassing, and bad. THAT IS WHY IT IS IMPORTANT FOR A RESTURANT TO BE CONSISTENT. ALWAYS SERVE "FRESH" FOOD. PEOPLE KNOW THE DIFFERENCE. They are not stupid. (Always Serve fresh meats). "DON'T OVER SALT YOUR DISHES".
