Went looking for a small locally owed restaurant, and found this wonderful little place. Wasn't sure what to order so asked them for suggestions with a few provisions. No corn and couldn't be spicy. They do have gluten free and vegetarian options here. I ended up getting a quesadilla with chorizo and a salad. The quesadilla was filled nicely, plenty of Vermont cheddar cheese, roasted plablano peppers and chorizo (see photo). They also include a side of sour cream. You could eat it easily without it dripping all over. I had enough for two meals. Yum! Made to order. The salad was so fresh. Made with spring mix of lettuce, lightly pickled red cabbage, diced red onions and tomatoes. Served with a tangy dressing. So good! Again so full, that I had enough for a second serving. Make sure to mix it up to appreciate the flavor combinations. Overall. A great place. Just wish they had a place sit outside and eat. I ate in my car. (They do have large cut blocks of granite??, that you can use as a seat.) Definitely recommend if you like Mexican cuisine. Bring a blanket or chairs and enjoy the view along with the excellent food.

Food was absolutely delicious, although on a busy night you may be in line to wait at the counter a while. It’s short order, so there is an area to order and one to pick up. Plenty of seating off to the side at near the entrance, plus at bar. But If it’s busy, which many times it is—I recommend considering taking your food to go and eating it out on the village green if weather permits. Like that this business is in South Royalton, it’s great for the locals and students. I will be coming back for sure!

Excessive waiting times. Waited 25 minutes to order food as the 4th party in line and walk out as the second group in line after 25 minutes of just standing there being ignored. The bartender/cashier kept filling drinks for people at the bar and ignored a line of customers waiting to order food. Without exaggeration just stood there for 25 minutes, despite the fact that when she took someone's order it took all of 1 minute to put the order in the computer and have them go through the tip menu. This was clearly not a staffing problem. The bar is small and both ordering and filling drinks could easily be managed by one person. It was just poor service and/or rude. Went to Worthy Burger where they sat us and served us in the same amount of time we were waiting to go from 4th in line to 2nd in line at Carlitas. It is disappointing as Carlitas looked like a nice little local place, but they don't treat you very well.... Ultimately very happy with our decision to go to WB as service was excellent and food...
