Great drinks, fresh food and great views in a beautiful enclosed patio overlooking the turquois blue water - what more can you ask for on vacation?!? We went here our first night and it was honestly hard to beat the rest of our 8 days in the Virgin Islands. A lot of places are "pubb-esque" (probably not a word...) but feature a lot of fried options - this place was the opposite.

I mean, the platter for the fish dip was packed with fresh vegetables and this really warm, crispy, fluffy focaccia that was hard to beat. I took a photo but my phone camera was blurry from the humidity - but suffice it to say, that I wouldn't pass on that dish... EVER! :) The tuna slider was a delicious bite and my husband had the ceviche, which was both unique and flavorful - they added some sort of cream sauce to it!

I think we drank our way through their cocktail menu (mainly because it was happy hour and they were only $10, but the 'ritas were excellent and I think we all agreed that the Soulshine and the Sea Smoke were our favorites, wonderfully complex, yet balanced.

The only complaint I have... Get there when they open so you can get the happy hour deals AND a parking space in their super tiny lot (also don't pull too far forward into the brush - there are rocks - we saw a girl smash in her front end). We ended up not going back because I was too terrified of parking on that insane hill in...

OH. MY. WORD. If you haven’t tried Fish Bar yet, RUN!!! Run to Fish Bar if you want a truly spectacular dining experience! Phenomenal cuisine, jaw-droppingly elegant atmosphere (every inch is so thoughtfully and beautifully designed), and the most sincere, energetic, and joyful staff I’ve encountered on St. Thomas. What an immensely talented chef; my husband and I drooled over every bite of our snapper ceviche, Polynesian wahoo crudo, and braised pork belly. Just WOW. Our server, Ella, was absolutely outstanding; so grateful for her expertise and her spirit. Thank you all for running your business with such unparalleled excellence! As residents, we’ll definitely be having a weekly date night here. We’re THRILLED to have you here on island!

UPDATE: Over a year later, and this is still hands down the BEST restaurant on St. Thomas in terms of consistency of excellence in ALL areas — the chefs are magicians, the servers are outstanding, and the thoughtful atmosphere is perfection. Our sunset date night here this weekend was so special. The Island Cobb Salad, Pork Belly Carnivore Plate, & Citrus Tart were all eyes-roll-back-in-our-heads amazing (as always!), and our server, Hannah, was absolutely exceptional! We continue to be ridiculously impressed by Fish Bar’s excellence and consistency. A true leader in the Caribbean dining scene! THANK YOU for knocking it out of the...

5 stars from the first time we met our waitress. Ella's careful consideration to our night was unparalleled. When we sat down, she asked us what we wanted to drink, and we let her take us for an adventure from there. The mystery mocktails that she and the bartender concocted for us were so refreshing and tasty. The avocado for an appetizer was a great choice, she said that's her favorite thing to eat before her shift, and that it's a staff favorite too! She recommended 2 crudos for us for a first course, one being the special, and we told her to put it in! We were not disappointed! The fish was so fresh and light, and the accompaniments were perfectly crafted and designed by the chefs. For a main course, we had the Caribbean Fish Plate with wahoo, and it was the softest and most buttery fish I've tasted in years! Lastly, she recommended the tres leche cake and the citrus tart for desserts, and it blew our minds. Safe to say, this was an experience we will NOT forget! Coming from someone who used to work in five-star dining, doing tableside chateau briand, this was the best decision we made while eating in St Thomas, hands down. At the end of our meal, Caroline took over, and was just as thoughtful and helpful as Ella! Wait-staff, food, atmosphere, everything was an outstanding and memorable evening, and we can't wait...

Fresh fish cooked well with local ingredients and excellent flavor. I enjoyed the passion fruit style wahoo crudos for my dinner and my husband had the Caribbean fish plate with excellent cream corn side. Both fantastic. We started with the smoked fish dip and jalapeño poppers. Everything was artfully put together with maximum flavor. We had the citrus tart for dessert. It was not too tart as they often are and had the perfect crust with fresh meringue seared with a torch. Time was taken with each dish. It was one of the best dinners my husband and I have had on the island and we have been coming for years. Can’t believe it isn’t on the top restaurant lists. I know the locals love it as that is who I heard how great it is from. Not a lot of parking so we got there at 4:00 pm to snag a spot and take part in happy hour. Their cocktails are as artfully put together as their food. I enjoyed the “soulshine”. The view is great too. We have eaten at all the nice restaurants on St. Thomas, Prime, Oceana, Sea salt, etc., and this goes to the top of our list. The tables and decor is simple but it puts the focus on the food. Great dinner!
