The very best no-frills street tacos in any mountain town in Colorado. Tip: If the food truck is closed, order online to pick up at their brick & mortar restaurant in downtown Salida. Then, bring your take-out to the riverside park for a picnic!
I used to live in Austin TX (taco heaven) and I’ve also tried tacos in Arizona, New Mexico, and even a non-touristy spot in Mexico City. This place ranks among the very best of taco trucks/shops I’ve tried.
Their Al pastor is really good! But I lean more towards a pescatarian/vegetarian diet these days due to some health issues.
The fish tacos are GRILLED (not battered!), it is rare to find a semi-healthy fish taco in Colorado!
Try the Nopales tacos! Literally the only place in Colorado I’ve found that serves cactus tacos, and they are addictive!
I’ve also tried the white queso and it’s up there with the best quesos. It may only be available at the brick & mortar location though — I can’t quite remember.
Be aware that it’s often one guy cooking/taking orders at the truck— if there’s a line you will need to be patient and let him work his magic. If you want full service I recommend sitting down at the downtown location.
Another tip: While you’re waiting for your order, spend a few minutes inside the outdoor gear/clothing consignment shop occupying the Pizza Hut building next door to this truck. I’ve found some treasures on outdoor gear while waiting...

Prices very reasonable. I will definitely be stopping by again to try other menu items. Service with a smile too. A convenient stop if your are shopping for used sporting equipment too. They sit on a layer of white queso, then the fries, followed by shredded cheese, asada meat, then topped with pico, guacamole, jalapeños and sour cream.
