Only had the tonkatsu with pork belly. Broth was too thin and not flavorful for my liking (has to at least slightly taste like ginger, onions, and white pepper [optional] and the richness of the slow simmered bone collagen). It felt like the broth had simmered too short or watered down. Pork belly was tender, juicy, and with big portions. Charred for great smokey flavor and texture. I prefer the pork belly to taste a little more marinated with soy sauce and mirin (think sweet wine) but this one was more on the natural side. Only runny egg I've seen in town out of the 5 places I've gone in San Antonio (most serve hard boiled probably so people don't freak out). The egg was marinated but you could hardly taste the soy sauce. Not a lot of wooden ear mushrooms. I don't care for bean sprouts but they were a nice crunchy complement to the noodles. The noodles saved this dish: springy, light, and clearly home made with a lime (the mineral, kind of aftertaste but in a good way). About 3/4 of the dish. Some thinly sliced scallions on top complemented the richness of the pork belly. The tofu is lightly fried but it absorbed whatever flavor the broth had very well. The fish cake was 1 tiny slice.
Don't bother with the tempura shrimp. Yes, it uses panko but the batter is thick and not at all light despite being crispy. Shrimp nor batter used salt or pepper which would be understandable except the oil used saturated it... and the oil was clearly a few uses from going rancid.
It's a good alternative to the thicker tonkatsu broths for those that prefer soy sauce based broths. You won't get the itis / sleepy curse from this.
I get that each region has their variations for the consistency of broth and l know I'm going to keep comparing it to JY Ramen here in town, what I had in different regions in Japan, and what I've cooked msyelf ... but this broth so light I might as well get pho that is at least more aromatic. And even if you judge it by its own merits, the dish never came together. All ingredients were like a coupel of kids playing in a garage band but doing their own thing. Maybe they're okay or even good individually but all together kind of mediocre.
But it's a good place for a date I suppose.
Now, I don't care for decor or service as long as your toilet flushes and your staff let's me seat away from people so my mouth can make sweet love to your food in the privacy of my own corner (and people don't see me eat like a 3 year old with my dubious mastery over chopsticks). First time here so if its your first time I'd recommend miso, their miso soup is awesome especially if your looking for a creamier broth. Shoyu ramen is less creamy but very bold if your into flavor. Their noodles are thinner, but oh mannn the ingredients used are fresh, the fish cake is sweeter which I enjoyed and the crunch from the ear mushrooms and beansprouts were the perfect touch of texture that complimented the bowl. That egg was so creamy and perfectly marinated, the pork nice and tender and my crispy chicken was a great addition to both add in my soup and dip in their homemade sauce which I loved, reminded me of a sweet and sour chicken. For the price your not going to leave mad or hungry. We had their Gyoza too for an appetizer, its like a chicken dumpling...mmm mm mmmm, the dipping sauce is more on the tart side but my husband liked that, I honestly loved it alone. Outstanding hidden little hideaway in a strip mall off 281!! My first experience with a ramen restaurant. One of the owners was behind the counter when we came in and saw my confusion as I was looking at the menu and took time to explain the ordering process and all the special ingredients. I had the crispy chicken in the pork belly broth ramen and it was SOOOO DELICIOUS. The broth was smooth, salty, hot, and well seasoned. The noodles were tender and plentiful.
