My friend and I ate here initially in the late-90's & loved it. We ended up there twice that day between hikes at Anza Borrego Desert State Park. Then I returned in 2009, this time on a 4 day long-weekend in Borrego Springs with a friend from work, to enjoy the hiking and scenery this beautiful area has to offer. We were doing the trip on a budget, and both enjoy Mexican food, and I immediately thought of Los Jilberto's as the place we should go. The food is excellent, inexpensive, and a great value. I love the salsa bar. I usually prefer to get food for takeout, but have dined in the restaurant before, which if I recall correctly, is counter service & self seating. The ambience suited us just fine, with both indoor and outdoor seating. The salsa bar was great, whether dining in, or for takeout, as we could fill containers to go with various salsas to use with the meals. We always had sides like rice & Refried beans with the main dish. The selection of salsas (salsa bar) is really great, especially for takeout, as it adds a variety of options to determine what you like best, to complement whatever you ordered. Some of these salsas I'd never encountered before (for example, the spicy carrot item; what is this called? I still don't know, but it was delicious & I haven't found that anywhere else since). Having liked it so much about 12 years prior, I remembered this place & went there every chance I could while staying in a vacation rental in Borrego Springs in 2009. We got takeout there so often we never had to use the kitchen in the vacation rental, nor waste precious time in a grocery store, on our relatively short trip. They have breakfast too, and I love a Mexican breakfast burritos, rice & beans etc. I haven't been there recently, but considering quality and value held strong over the span of years between 90's & my revisit/s in 2009, I'd be willing to bet that it's likely still the best casual dining place and/or takeout in the area or anywhere nearby,...

I just went in to pick up the four shredded beef tacos and two burritos I ordered over the phone.

When I walked in, the cashier said “the chicken tacos?” I said “I ordered shredded beef tacos and two burritos.” She said “oh yeah. They are shredded beef.” (I ordered one plain and the rest not. I confirmed it twice with the person on the phone).

The hard shell chicken tacos had an old tasting tortilla shell, not crunchy like normal and was super soggy. Very disappointed that as regular customers they didn’t verify my order was correct and would serve such poor quality food.

My five year old was very disappointed and they leave on vacation at 2:00pm. We picked up our order at 1:30ish and don’t live close enough to try to fix it. Bummed the young teen didn’t care about...

I’m not really happy with this place And it didn’t matter if I got the plate or just a burrito that used to burn my chorizo burritos and I can’t stand that So then I used to get a ham egg and cheese burrito so instead of just ham egg and cheese burrito they used to want to put potato in there too and then when I said no potato they look at you like Your weird and they don’t make it easy it’s cash only my friend insisted on eating here again and it took her three different times going back into the restaurant Reminding the lady that she had one more burrito to make she told her three different times ham egg and cheese burrito and they still put potatoes in it a cheap filler and that’s all you could taste was potatoe no more they will never see a penny...

The Anza-Borrego Desert is an awesome place. But, before one heads out to check you the blooming cactus 🌵 it’s important to have good breakfast. Los Jilbertos Taco Shop has an awesome choices. The carne asada burrito and the carnitas was delicious. This a good place to get great meals. Everything we order was perfect . We had many requests due to food restrictions and the staff was fantastic in modifying some of our orders. I am grateful to all the staff at the shop they were patient and kind. Next time you find your self in the area be sure to stop in at Los Jilbertos Taco Shop.

Really delicious meal at a great price with fast, efficient service. Plentiful seating inside and out. Be aware that it is cash only but they do have an ATM nearby. The only thing that would make it better would be credit card acceptance. The shrimp burrito that I got was very large and if you're not too hungry, enough to share for 2 people. Love the salsa bar with pickled veggies. Salsas all had great flavor and it was well worth a trip here in this small town especially if you're craving a great Mexican meal.

They have a small salsa bar with pico de gallo, red sauce, green sauce and pickled carrots. The price was reasonable and the food plentiful! Everything was delicious! I can see why there was a line waiting to order. Food came out fast and hot. Definitely one of the top Mexican food places I've eaten! They are cash only
