In an iron skillet place a dollop of olive oil and a tablespoon of butter. Wait until just before the mixture starts to smoke Then place one tortilla on the grill.. When it Browns off turn it over and begin to build your tortilla tower. Shredded cheese. Then perhaps some hot peppers. A little more cheese. Sprouts. Various vegetables. Prep the vegetables so they are small, cut small then place another tortilla and build on top of that build as high as you want. But remember youâre going to have to put some kind of lid over everything, perhaps another iron skillet turned upside down. Remember to use your spices, hot sauce and so forth. When your tower is 6 to 8 inches tall, turn down the heat almost to off and cover as described above. Set a timer and check every 10 minutes. Now comes the fun part. Turn everything over and brown the top tortilla that is now based on the grill by turning up the heat a little bit when everything is cooked you satisfaction, let your tortilla tower sit and rest for about 5 to 7 minutes. You can serve with whatever you want. Steak. Fish. Sausage. Coleslaw....
