This is a tough one. While I can see how many of the "newcomers" to Cactus Blue at their new location would love it...for me...a customer of the original Cactus Blue since they first opened (close to 20 years?) it's not the same. I went there for a takeout order and my wife went in while I waited in the car, so I can't comment on the place itself. However she seemed a little confused after coming out. The menu changed and she found it a bit strange/off inside. I guess she was just used to the old set up which was an actual "restaurant" and was expecting the same. Anyway we got our food home and our first shock was that they no longer give tortilla chips and salsa with takeout! Actually the whole menu has changed and there is no longer a "lunch menu." Now to the food. Like I said I can see newcomers liking it but comparing it to the original Bethlehem restaurant not even close. Less food for one thing and it just doesn't taste the same. Not bad but just not as good. I've had takeout from the original place many times especially in the last few years due to the pandemic. This is not the same. I had the Enchiladas, something I've ordered many times over the years. I was very confused...what is this? Certainly not Cactus Blue Enchiladas! Sorry, I gave it a try thinking it was the same old Cactus Blue. It's not so we won't be back. The original Cactus Blue was the best Mexican restaurant around and the food was comparable to when I was in Mexico. Like I said, for the newbees, they don't know. But this is just not the same. What shame. Goodbye...

The chips are great, fresh and crispy but the cheese dip was gritty and passable. I wish I would have ordered a side of guac instead - there was a little bit on top of the chimi and it was really delicious. I'll be ordering that next time for sure. The enchilada was undercooked but the verde sauce was SO GOOD. Surprisingly the rice is more Puerto Rican style than Mexican - with the peas and a tomato base. It was just okay, honestly.
The carne fries had lots of fresh toppings, decent steak and was a large serving, but the fries were soggy and really salty. Just like almost everything here, there was a really good and pretty bad part. Mostly the sauces are great but a miss when it came to the food itself. Except dessert - I will be dreaming of the banana churro for a while. It also cost 2 of us over $80 for lunch and dessert, so that's kind of expensive. Especially when everything is served on paper bowls & takeout containers that literally fall apart by the time you're done eating. They got soggy and when you use a knife it shredded the bowl so there is food dripping into your lap. (Tables aren't solid surface) And there are only 2 diet beverage options: diet coke...
Read moreCaught the food truck more than once becuase my work place provided it to the staff. Ordered a chicken burrito with chips and guac as my side. The chicken was sopping wet not moist. Had tomatoes in it which i do not like and did not know since the truck menu does not state anything beyond the basic item you select. They were also all at one end like a taco bell burrito does with sour cream. That was a simple thing to get over. The beans that were in the burrito, what little there was, was bland and tasteless. Towards the end of the burrito it was literally leaking into my hands with the water they maybe had the chicken sitting in. Burritos should not leak into your hands like a faucet. The chips were bland, no seasoning, which isnt a bad thing if they werent fried to hard state. The mini cups of guac or sour cream were okay, nothing stunning. I did not rate the "atmosphere" because i have not been inside one. The only thing great about that meal is that it was free from my employer. Beyond that, i would not pay to eat that again. Heck, if my employer has them again for free i will pass. Ive been told years ago that they "used" to be good and it seems years later they are still right. I would recommend plaza azteca over...
