As any discerning pizza lover knows, the ultimate test of a pizzeria’s craft lies in its simplest offering: the classic cheese pizza. With that in mind, I recently visited Nana’s Byrek Pizza in Waterford, Connecticut, eager to see how their take on this iconic staple measured up.
To begin with, the flavors of the pizza were respectable. The tomato sauce was well-balanced—neither too sweet nor too acidic—and applied with a measured hand, achieving that coveted harmony between sauce and cheese. However, where the flavor excelled, the texture left something to be desired. The slice, when held, lacked structural integrity, with a noticeable limpness that detracted from the eating experience. Further, while the cheese was flavorful, it missed that golden, bubbly finish—a hallmark of a perfectly baked pie.
It’s worth noting that a slight tweak in preparation might make all the difference. On a future visit, I plan to request the pizza well done, which may resolve the texture and browning issues.
