We had lunch today in a charming and small restaurant The Hub at Weston. We had a wonderful experience from the minute we open the front door and were warmly greeted by, Gabe a back server who comfortably seated us at our table. We then met our server Lila, who helped us with our menu selections and was so cordial it made us feel like we were sitting in her dining room. The meal was phenomenal, as was the ambience, the friendly and warm atmosphere, and most of all the superbly prepared corn soup and unique sandwich selections. When we finished eating, we were so impressed we took pictures with Lila Gabe and Bevin the lunch chef, who told us about her background and how she became the lunch chef at The Hub. When we left, we said we would be back, and we meant it. If you’re going to be in Southeastern Vermont, you must put The Hub at Weston on your “to do list” so you too can duplicate our wonderful and memorable dining experience. Reservations are required because of the limited...
Read moreThe Service was so great! The women/servers were kind, informative, gave us wonderful suggestions for hikes. So personable and sweet, but very efficient! The food was absolutely excellent. My partner said the Omelette was perfectly cooked, filled well and was seasoned well. The Grilled home fries where grilled to perfection with some flavorful grilled pieces, seasoned so well! As a Vegan they had wonderful vegan options, they had Avocado Toast with egg, tomato and bacon. They held the bacon and substituted the Egg for this very well seasoned tofu scrabble on top with some fresh fruit. Even their dressed greens were fresh and dressed well, not too much not too little. Then we have their Vermont Overnight Oats, it's Vegan with oat milk, granola, VT maple syrup, blueberries, strawberries and pumpkin seeds. It was so flavorful! I would recommend and go back again in...

Even though Weston is a small town, the restaurant is so good that The Hub could do well in a large city. Because my experiences at The Hub have been so positive, I arranged to have a dinner for a 50th reunion with college friends at the restaurant. I asked the chef to prepare something special for the event, and he created an amazing 5-course tasting menu with wine pairing, which was served to us in an upstairs private room. The menu was imaginative and delicious, the wait staff was great, and the experience could not have...
