I am very excited about this place! The inside space is really cool; a good mix of intimate and casual. We sat at the bar and were greeted by Ryan, one of the owners and the creator of the eponymous spirit. He gave us a great introduction and a few things to taste. Within our group I got to taste a majority of the cocktails on the menu. To be honest, not all of them wowed me, but there were several I liked and I'll admit I went in with really high expectations. There was a wide variety of flavor profiles represented across the menu - impressive considering they only use two spirits - so it's more a matter of finding the ones that suit your taste. And at $11-12 per drink, it feels like a much better value than other places in town that put much less effort into drinks costing just as much. In addition to the bar, there are a few couches and chairs inside for small groups. While a bit barren, the outside space has plenty of room for yard games and the back patio has shaded seating. It is also dog friendly, at least outside. Already this place is one of the more interesting and exciting bars in town and it seems like it will only get better. They are working on getting food trucks, which will be a great addition. Ryan was already talking about new drinks, so it sounds like the menu will evolve. Tucked away in the Texas Hill Country just off the Devil’s Backbone, Senza Maeso is the kind of place you stumble upon once and never forget. From the outside, it looks like a simple outbuilding with a gravel lot—but walk through the door, and you’re instantly transported. Inside, it’s a 1920s art deco New York lounge reimagined with a sci-fi twist—Gatsby meets Carl Sagan, and it’s pure magic.

The cocktails are next-level. Every drink is handcrafted with their own house-made alcohol, uniquely fermented from the rare Senza berry. Smooth, complex, and completely original—there’s nothing else like it.
