Chef Thang, our favorite Executive Chef at Barefoot Restaurant in the InterContinental Sun Peninsula Danang, has consistently been the most reliable and talented chef, producing outstanding local and international cuisine for us whenever we stay at the hotel. This trip was nothing short of spectacular, thanks to his rendition of a whole grilled garoupa fish prepared Vietnamese-style. The fish was incredibly fresh and meaty, and we enjoyed it so much that we finished the entire dish, leaving only the bones.
However, the most impressive dish of the night was a duck and bamboo soup that Chef Thang effortlessly prepared. The flavors were clean and elegant, and despite bamboo’s naturally pungent and strong taste, Chef Thang harmonized the ingredients perfectly.
Coincidentally, our monthly vegetarian Buddhist day fell on one of the days during our Valentine’s weekend at the hotel. We decided to return to Barefoot, where we requested a vegetarian dinner specially created by Chef Thang. True to his reputation, he went above and beyond, crafting an exquisite five-course authentic Italian vegetarian meal just for us. Each dish was a masterpiece, showcasing his creativity and dedication to culinary excellence. Chef Thang truly didn’t disappoint—every bite was a delight. Our favorite of the evening was the aglio olio pasta, which was perfectly balanced, flavorful, and simply unforgettable. It was a meal that not only satisfied our dietary preferences but also left us feeling deeply grateful for such a memorable dining experience.
