Bún quậy Squid Noodle Soup When you want to go on a successful soup adventure you have to well and truly throw yourself into the deep end. You need to see an opportunity that may be uncomfortable and seize it. For me that was Bún Quậy Kiến Xây. A bustling institution of Phu Quoc which specializes in a squid and rice noodle soup accompanied with a sauce or condiment that you create to your own taste. I lined up with several other people who had been a part of this line many times before, they knew what they were doing. For me, a silly foreigner boy with only a couple of Vietnamese words in my vocabulary all I could do in this situation was point to the photos on the menu. The cashier person was so lovely and went out of his way to make sure I knew half of what was going on. He sent me on my way to the condiments table with a futuristic buzzer which would inform me when my soup was ready. It was only moments later when I was halfway through crushing up chili’s, mixing in MSG, Squeezing lime for my sauce they the buzzer vibrates and low and behold I was presented with a soup containing two of the juiciest and fresh pieces of squid I ever will see. Lucky for me I found a table in the corner, shared with two locals who were proud enough to tell me I had too much lime in my sauce 🤷🏻♂️🤷🏻♂️. The soup was delicious! The stock was subtly fishy, made all the better by my recent saucy creation. So. Much. Fun. The squid as expected was super tasty and the fish cake? Was a delight too. Once you get past the frenetic energy of this restaurant with locals jostling for every spare seat it is a truly fantastic experience. Now to find where to buy one of these chili crushers to take back to Melbourne!

I would suggest not going at peak dinner time because it’s pretty chaotic - there are two of the same restaurant but the one with the blue front is the place to go (because the other is for Vietnamese customers only because they don’t speak English back there!). Ordering is simple enough because there are really only two options - the noodle bowl with a full squid or without (and both come with a sugarcane juice)! (Also the locals were ordering some fried things from an unrelated cart and bringing them inside to eat while they waited for their noodles and the restaurant seemed unbothered so we followed suit!) We did the without squid version and it was scrumptious, and you can watch the locals make their spicy sauce to their taste (as well as they may give you a receipt with instructions in English!) to figure out how to make it - dip your noodles in or if you can handle a powerful spice, dump it into your bowl! I handle spice pretty well but the sauce I made was SPICY so beware! It comes quite bland in the first place so don’t panic since it’s up to you! All in all very tasty but try to go in the afternoon so you can avoid the mad rush and so you don’t worry about them...

The seafood was fresh and cooked perfectly. The vegetables were crisp and flavorful. The peanut-based sauce was rich and creamy.
