Recommend not to try the snail in the photo below as it was super tender, hard for your teeth and pricey - I forgot the name of it. Vietnamese Raw Herring Salad (Gỏi cá trích) was not fresh, maybe it was the end of the day. I didn't take many photos as we were all starving.
