SNACKS Crispy lamb & Japanese mustard Wagyu tartare cracker Stuffed chicken wing, scallop, lobster Magill Estate crumpet, roe, smoked trout 4 delicious morsels to start the night along with sensational Champagne. Crumbed tiny bababababa was cooked to perfection married with tangy mustard You had me at crack Wagyu hmmmm I just love great tartar and this certainly is. A crunchy dark cracker tartar with tiny bits pickles. Lip smacking one bit deliciousness The amazing chicken wing Stuffed; who thinks to stuff a chicken wing. Then how many apprentice does it take to stuff a chicken wing I have no idea but this is an amazing thoughtful imaginative impressive delightful yummy wonderful (okay that’s enough) you get the idea. This is a special delicate dish. I tips my lid to: the master chef who thought of it, the skilful chef who created it and the wonderful chefs who did the stuffing. SECOND COURSE Alasonian toothfish, brown rice miso, pickled cucumber Just look at that shiny delicious looking lump of seafood. Glowing of miso with thin pickled cucumber slices. You rest the nice against it and the weight of the knife falls through to reveal the perfection. Absolutely perfectly cooked fish. Then you get to taste it. Oh my goodness gosh hello taste buds get a load of this. It’s delicate it has been handled with pride and professionalism. A dish I will remember for years. Every time I see a tooth fish this delicacy with salivate my taste buds. A huge thanks to Scott & Rod. I just love this. THIRD COURSE Risoni, truffle, honey Risoni - I love Risoni cooked in wonderful stock. I love truffles I love honey. Are you getting the point. As the plate is lowered to the table the waft of the dish hits you before you even see it. The poor wine maker explaining the wines as most, ignore him, with head turning to the dish with smiles. Then you get to eat it. Heaven I’m in Heaven. Just yum I’ll fly back from Melbourne just for this dish. FOURTH COURSE Wagyu, rosemary, X.O Sauce Have a look at the shine on the X O Sauce it is so inviting. Then you look at the Wagyu THATS HOW YOU COOK A STEAK. A perfect size perfectly cooked to perfection (Yeah I know I’ve repeated perfect a few times but there is a reason) It’s the perfect finale to an amazing night and it tastes perfect. FINAL COURSE Selection of cheese Penfolds Grandfather Port We chat we eat a bit we chat we drink. We are indeed having a night to remember. I should rave about the stunning wine presented by the skilful Wine Maker Henry Slattery. But that is for me and my memories. Henry was amazing to listen to, he is passionate about his job. I was lucky enough to have him opposite me. We talked a lot about wine. I thank him so much for his valuable insight and discussion.
To the entire crew at Magill a huge congratulations and thank you it was a great night. Hannah thank you for all your help, nice to finally meet. Unfortunately, the availability of food was notably limited, which left many attendees dissatisfied. Staff circulated with hidden trays of canapés, trying to reserve bites for those at the tunnel ends, often excluding everyone in between. A single bao bun appeared later as a larger option but fell flat—served cold, dry, and overloaded with raw chili, which overwhelmed any subtlety the dish might have had. A scattering of quality charcuterie boards throughout the venue could have offered much needed sustenance, particularly for Friday evening attendees arriving straight from demanding workdays. The DJ delivered an outstanding set worthy of five stars, setting a lively tone for the evening. Hospitality staff were courteous, though frequently unable to ensure all guests received even a single bite of food. More concerning, many wine servers knew little about the wine they were pouring other than its name and the country that it was from-notably many relied heavily on “cheat sheets” for information about the sole wine they were pouring —this was a very disappointing lapse in expertise for an event positioned and priced as a high-end wine experience.
