Chef Joey — Attraction in Calgary

I truly enjoyed this class as a corporate event. It must be hard leading a group of virtual home cooks of varying skill levels through a camera and maintain that level of enthusiasm. I would love to take this class in an in person setting.

Chef Joey was inclusive, laid back, knowledgeable, charismatic, and entertaining. I liked that he was himself and not too serious. The format was fast paced, prep work is encouraged. The recipe was simple enough for most basic cooks, but the flare he included made it interesting for more advanced cooks, too. I would have easily cooked this recipe from a cookbook, but i did learn a few tricks that produced a higher quality end result.

Print off the recipes so you can catch up if you fall behind, work in pairs if possible to be efficient, and do explore your neighbourhood grocery stores like the italian centre/H&W (in Edmonton), farmer's markets, and little ethnic stores available to you. It's more fun if you can incorporate the regional or specialty ingredients as...

(original) Chef Joey and his lovely wife Petrina came to our home to host an in-person cooking class as a birthday surprise. They put some menu options in front of me, I made a few straightforward choices, and they took care of the rest and brought EVERYTHING required. All very fun, low stress, easy to work with but also professional and organized. Chef and Petrina are great company, Chef is a great teacher in the kitchen, and the whole thing was an absolute delight. And yes -- the food was incredible....
