Château Palmer is the highlight of our trip 😊 Let me explain why.
From the very first email arranging “La Promenade Palmer”, I could already feel the care and attention to detail that define Château Palmer. It’s a new, fully customized private experience offered to only one group per day — and it was truly exceptional.
Upon arrival, we were warmly welcomed and taken on a walk through “the village” — a charming little community inside the property where Palmer’s staff once lived (only five families still reside there today). We got to see the offices, the staff canteen (which looks like a lovely restaurant with its own chef), and even met the CEO by chance — what a lucky day! We also met the chef who prepared our meal at the Château.
We visited the vineyards and learned in depth about their biodynamic practices, then explored the vegetable garden where they grow produce for guests’ meals. The gardener explained how they focus on cultivating vegetables with 'intense flavor' to harmonize with the wines. Coincidentally, we arrived just as the freshly harvested grapes were being brought in — and got to witness the entire process up close!!
Lunch was served inside the Château — starting with canapé and champagne in the living room (the caviar was excellent, and the langoustine tartare was absolutely refreshing). The five-course meal with wine pairing in the dining room was exquisite. My favorite dish was the first course: razor clams, shrimp tartare, and mussels in a clear, chilled tomato broth — the tomatoes were incredibly flavorful, now I understood what the gardener meant!
Each wine was perfectly matched with the food, thoughtfully designed as complete combinations rather than simple tastings. All four Château Palmer wines complemented their respective dishes beautifully — it’s impossible to pick a favorite. The chef previously worked at two-Michelin-star restaurants and five-star hotels, and it truly showed in every detail.
