Azienda Biologica De Sanctis — Attraction in Frascati

My wife, daughter and I emailed and set up a tasting very easily just a few days ago. We were met by Flavia who gave us a short tour and invited us inside the tasting room. We sampled 3 wines (Malvasia, Cab Franc Rose and Cab Franc). Each wine was paired with a very generous portion of meats and cheeses along with bread and EVOO. We totally enjoyed the wines and food as well as the hospitality extended by Flavia and then later met one of the owners, Luigi (and large friendly dog!). Azienda Biologica De Sanctis was amazing!! The vineyard is in a beautiful setting. We had a different tour cancel the morning-of due to a positive Covid test, so we called around to look for other available tours. They were very accommodating of our last minute request!! The tour was nice and very informative. The whole experience felt very personal, and our guide answered all of our many questions about the wine-making process. We got to try three different delicious wines that were paired with meats and cheeses. It was inspiring to hear about Francesco’s passion for his work. Una piccola cantina dei Castelli romani a conduzione familiare, di lunga tradizione (vignaioli dal 1816), rigorosamente bio, che produce due vini tipici del luogo, il Frascati (496) e il Frascati superiore (Abelos), con risultati davvero eccellenti. Il Frascati superiore ha una struttura e una gradazione importante per un bianco, ma si beve con piacere grazie ai profumi floreali tipici della malvasia e alla ricca mineralita' che gli conferisce sapidità e freschezza. Da provare l'abbinamento con una cacio e pepe. Purtroppo non abbiamo potuto assaggiare il rosato Onde perché esaurito. La produzione è piccola e questa cantina vende tutta la produzione ogni anno. Ma per fortuna sono rimaste ancora delle bottiglie di Juno, un rosso a base di Cabernet franc in purezza. Una rarità, perchè questo vitigno non è tipico della zona, ma anche in questo caso il prodotto è di qualità elevata. Infine ci fanno assaggiare anche il Diciassette undici, la loro interpretazione del cannellino, il vino dolce dei castelli, che abbiniamo con i tipici tarallini al vino prodotti sempre in zona. Una bella realtà in un territorio votato, una conca che anticamente era il lago Regillo, teatro di una battaglia di Roma contro i Latini, e prima ancora il cratere di un vulcano preistorico.
