Bernhard's meat processing is one of the best processors in the area. Their sausage recipe is flavorful and customizable and they have some really good options in terms of different products. My favorite with them is the jalapeno cheese sausage, but even the plain is very good. They did take a little bit longer than other deer processors to get my meat back to me this year and I found out, to my disappointment, that they don't automatically vacuum pack the meat, it's an upcharge you have to ask for (I didn't). Also, they are quite expensive compared to some of the other processors in the area. All of that taken together, the general quality and flavor of the meat is worth the price if you are getting value added products (like sausage, jerky, etc). If you are looking for simple butchering, probably best to look at some cheaper options nearby. I purchased chicken twice from their retail counter. The breast were very large. Which is not necessarily a good thing. I asked if the chicken was organic. I got a quick no. I expected the manager to brag on the product like saying it is free range, hormone free, no antibiotics, ect. Even Walmart provides this basic information on their packaging. Rather I was told the chicken comes fresh from Nixon Texas. This is no praise. There are a number of processors in Nixon. Some good some bad.
