Update: easy-peeling, hard boiled eggs: Boil water with some salt and vinegar added in a covered pan. Vinegar softens the shell. I put eggs directly into boiling water using tongs. 13.5 minutes or so. Turn off heat, safely move pan from hot burner.
Put eggs with tongs directly into pan with cold water and 8-12 cubes of ice (depending). Let them cool enough to handle. While still warm, I remove all shells(use as plant fertilizer with nutshells and coffee grounds)) in a few minutes with no problems. I store in paper towel lined Snapware.
Update 10/28/24 About 2 weeks ago Purchased 15 dz.(180) White extra-large $72.50 + $2.54 debit charge. Yolks were yellow not golden ruby red as previously reported. Eggs very fresh.

12.5 dozen (150) Eggs purchased were 1.5 hours old. We keep them in a 37° fridge. Good for at least 3-4 weeks. Yolks were golden, ruby red.

We’ve been buying eggs from Billy’s Egg Farm for years and have always appreciated their quality, but the recent price hikes are getting out of hand. Back in 2020, a 30-flat was $8.75, and when prices went up to $11 due to COVID, it was understandable. However, the increases haven’t stopped. First $12 for a 30-flat, then $14, and now it’s $14 for just 20 eggs? That’s insane!
As others have mentioned, these aren’t antibiotic-free or pasture-raised eggs, so it’s hard to justify these prices. You can get a 24-pack of Organic Pasture-Raised Large Eggs for $11.50 at Sprouts—a much better option for the price and quality.
At this point, it feels like greed is driving these changes. We loved supporting this local business, but with these prices, we might as well go to a grocery store instead.
