BEWARE!!!!
The former owner of Hudson's Meat Market has recently purchased the buck stops here. I grew up and Austin and went to Hudson's for years before I finally couldn't take the price. Make no mistake, their processing is the best in town, but the price became unbearable.
It appears that the same is now true here. I just picked up my 2 deer, and walked out with a $719 processing fee. My friend took his two deer and walked out for just over $500. Rarely have I ever had a bill that is even half of what I paid today.
The fault is not all theirs, after all, I am the one who did the ordering. But, to let someone rack up an over $700 bill without saying anything is, at best, bad customer service.
As I left today, the lady at the cash register told me, "I'll tell you like I told another guy, instead of ordering '1/3 this and 1/3 that,' you should just order the amount of pounds you want." Thanks for that. I wish you had told me that when you were...

My only concern which will limit my business with them and may be specific to me is that I realized they don't allow you to change your deer / pork ratios for sausage and chorizo. Meaning, they assume 50/50 deer/pork in the sausage but I prefer processors that can go leaner to say 90/10 deer/pork. Great selections and the original owner, Mr. Hudson, is still running the place with great help from family and very nice employees.
