It's fantastic. No one will ever give this place fewer than 5 stars.
They're in the middle of Rockbrook shopping center, just across the street from Savory Spices (a great place, too) and Pets R Us. You'll park right at the door, which is always a plus. Open on Sunday until 3, which is uncommon for a butcher.
We've been in twice now - once to check the place out and grab a few bites, and again for a meat, cheese and steak purchase. We're thrilled to have them in the neighborhood. The staff is extremely knowledgeable and excited to talk about their shop and products. They are looking to recreate the local butcher shop (so many of which no longer exist) with a diverse inventory.
Their house made tapenade was fantastic (usually not my thing, but silky smooth here). Meat and cheese recommendations for a charcuterie tray were spot on (with taste tests offered proudly). While they stock choice and prime steak, their choice product is the top end of that grade because they're picking the best of the bunch. Their frozen smoked salmon, an impulse buy, was better than I expected - probably the best I've had that wasn't smoked in-house.
I've never had a butcher essentially beg for custom orders, but these guys seemed to want to be challenged. I'll be ordering some chunky Italian sausage (minus the fennel seeds) soon. They even take phone-in orders, and suggested that I call ahead if I want to have a pound of chuck waiting for me at the counter on the way home.
They've got a few other grocery items, too, so you can grab buns for your burgers or potatoes and onions to make sides. A collection of available bottles of wine isn't huge, but, again, is well selected and has lots of options. Don't expect to get your Frosted Flakes here.

Read moreI happened by this place while shopping at the pet store across the street. You don't see butcheries very often anymore, so I decided to come inside and take a look. The owner, Andrew, greeted me with playful banter while two of his employees cut up fresh ribeyes and helped other customers as they came in. The establishment was incredibly clean. The meat behind the counter looked fresh and had very good color. There was a nice variety of sausages, beef, pork, chicken, and gourmet cheeses. Along the side walls were select bottles of fine wine, baskets of onions, garlic, and baby potatoes. Andrew explained that there was more available than what was on display. Much of his business is cut to order, and he also specializes in charcuterie. I decided to purchase two 1.25" bone-in cuts of ribeye. Andrew cut them for me, wrapped them in paper, and bagged then in an attractive white paper bag with a twine handle (a nice touch). I was very impressed with his butchery, the friendly atmosphere, and the prompt service. But the real star of the show was the meat. When I got them home and unwrapped them I was immediately impressed with the texture, the color, and the marbleing of my steaks. I seasoned them with some salt, rosemary, and pepper and let them sit for about 45 minutes before reverse searing them over hardwood lump coals. The result was fantastic. There wasn't a single piece of gristle on either steak. The fat rendered perfectly and the meat was tender enough to easily be cut with a butter knife. The flavor was rich and savory. I paid choice price but it seemed like I had prime cuts. I don't live in the neighborhood but will gladly drive from Papillion to buy my meat here. I highly recommend...

My sister is a charcuterie expert. She and her husband have been putting together boards for years and they have a very keen sense of what works and what doesn't. When I asked if she would be willing to put a board together for my wedding, she was disappointed that she would be out of town in the days prior and would not have enough time to assemble something she would be happy with.
When I asked where she would recommend I go, she didn't hesitate! Cassanova's in Rockbrook!! She said they get their boards there these days and that there's no place like Cassanova's anywhere else.
WOW!! She was right on!! From the moment I entered to the night of my wedding, the staff took care of everything. From set up and delivery, to asking what my wedding colors were so they could deliver something incredible, this shop was terrific to work with.
