I've been following Nicolette, who dove headfirst into oyster farming full time during the pandemic after she lost her job, for a long time, and had been dying to try her oysters. She's one of few farmers on the FL East Coast, growing in the Sebastian Inlet.
Oh. My. God. these are some incredible oysters. Hands down some of the best I've ever tasted. The estuary waters give them high salinity up front and brinier flavor with a savory finish. Just amazing. Can't recommend enough. They are the small ones here. Small, but pack some serious flavor. And such cool shells!
Also, check out this wild little crab 🦀! Found it in one of the Sebastian Silvers. These are called pea crabs, and while they're not found in Gulf oysters, they're not uncommon in East coast ones. They're actually considered a delicacy, and you're considered lucky if you find one. They can be eaten raw or cooked, and I have to say, it was pretty tasty straight out...
