Oyster Oyster is a highly popular vegetarian restaurant in DC — so hard to book since it opened! Their menu changes with the seasons, featuring local produce from farms around the DMV. 🌽🍄 The restaurant is committed to sustainability and reducing waste ♻️, which you can see in many dishes. That’s also why they earned a Michelin Green Star — and in 2024, they got their first Michelin star! ⭐ This time, I tried their spring-summer menu with wine pairing 🍷. Every bite was a surprise — familiar ingredients like mushrooms were transformed through creative techniques like dehydration and marination, making the flavors intense and layered. The main course mushroom dish was a total umami bomb! 💥 The sunflower butter served with the bread has been a signature since day one — rich, nutty, and with a hint of oyster sauce and shrimp paste vibes. Honestly, one of the best spreads I’ve had lately! 🧈🍞 Dessert was a fennel sorbet with strawberries — refreshing and uniquely delicious 🍓❄️. Every dish felt thoughtfully crafted, with great attention to texture and flavor layering.
