10-Hour Simmered Tonkotsu Broth — Tanaka Ramen
Invited to check out this recently revamped ramen spot in Lincoln Park — now under Chinese ownership! I’d tried it before under the previous owner, so I was curious how the flavors might have evolved. Came on a Sunday to taste for myself. 🍜 Garlic Tonkotsu Volcano Ramen (Spicy Level 2) – The broth is simmered for 10 hours — rich, deep, and savory without being overly heavy. The garlic blends beautifully with the pork bone base, and the spice level (2) adds a kick without overpowering. Finished the whole bowl without feeling salty or overwhelmed. 🌱 Vegan Ramen – Totally plant-based, from broth to noodles. The vegetable broth is surprisingly flavorful, lightly spiced, but milder than the tonkotsu. The green noodles are made with kale — does that mean they count as veggies instead of carbs? 😉 🍤 Agedashi Tofu – Crispy outside, silky inside. Could use a bit more sauce, but tasty. 🥬 Brussels Sprouts Tempura – A unique take — tempura-fried Brussels sprouts keep their natural texture without the bitterness that can come from roasting. 🍛 More Than Ramen – The new menu offers plenty of small plates, plus curry, katsu don, and rice bowls — great for lunch after strolling through Lincoln Park.
