Adorn — Ever Alum Takes the Helm at Four Seasons 🍽️✨
Ever since Johnathan left, I’ve been curious about who would step into the chef role at Adorn in the Four Seasons. Two months ago, it was announced: Richie Farina, former sous chef at Ever. The new menu finally launched earlier this month, so I went to try it! 🍴 Started with an amuse-bouche trio: celery root tart, butternut squash cream, and coconut macaron — light yet cozy, with both refreshing and wintry notes. 🍴 Caviar over classic potato purée — served under a cloche filled with smoke, released tableside (very Kasama-style!). The smoky aroma lingered beautifully. 🍴 Pan-seared salmon with carrot glaze and purée — sweet and savory, though I wished the fish had been slightly more tender. 🍴 The highlight: a surf & turf-inspired vegetarian dish made with kombu and lion’s mane mushrooms that mimicked meat perfectly. Dry ice hidden in seaweed created drifting mist with a subtle oceanic scent. 🌊🍄 🍴 Tender pork cheek topped with crispy potato strings (not fries — delicate shreds). 🍴 Palate cleanser that looked like a soft egg but was actually passionfruit in coconut water — tangy, sweet, and refreshing. 🍴 Dessert was perfectly balanced — not too sweet, with cake and liquid nitrogen ice cream prepared tableside by Chef Richie himself. ❄️🍰 🍴 Petit fours to finish: guava pâte de fruit, caramel, strawberry marshmallow, chocolate, and raspberry meringue. A bit too rich to finish at the table — would’ve been nice to take them to go! Overall, the menu has two-Michelin-star ambition, though execution sometimes lags behind the vision. Still, at $150 for the tasting menu, it’s a solid option when other top Chicago spots are fully booked.
