A bit late, but sharing October’s special anyway. 🍜 October Special – A blend of pork bone and fish broth, with zero fishy taste — just rich umami. Served with tender pork shoulder chashu and curly noodles that really hold onto the broth. 🍜 Midwest Shoyu – Uses locally sourced flour, though honestly, I couldn’t taste a huge difference. Comes with both chicken breast and chashu — my mom preferred the lighter chicken option, which paired well with the clean chicken broth. Compared to earlier days when Mike was always in the shop, he’s clearly more relaxed now — even leaving the team in charge for short periods. But quality and flavor remain top-notch. Still one of Chicago’s best ramen spots.
