Bar Bambi Bringing Creative Cocktails and Eclectic Ambiance to West Town

Chicago’s burgeoning West Town community will soon score a new hotspot for creative cocktails and good vibes, courtesy of a local award-winning bartender. Bar Bambi is the brainchild of mixologist extraordinaire Katie Renshaw, known for her work at high-end Chicago dining institutions including The Aviary, Etta, and Hawksmoor. Here’s a behind-the-scenes look at your new favorite bar. Classic cocktails with a modern twist ------------------------------------- Renshaw’s progressive approach to bartending will be on full display at Bar Bambi. Techniques like fermentation, forced carbonation, and clarification will elevate each drink to its full potential. The rotating cocktail list promises an array of ever-evolving textures, flavors, and aromas for bar-goers to explore. From a contemporary twist on the classic martini, to an Old Fashioned-highball fusion, there’s something in store for every kind of drinker. The menu will also feature a long list of natural wines and spirit-free options , as well as a curated selection of bar snacks to accompany a round of drinks. A look inside ------------- Designed in partnership with global architecture firm Gensler, Bar Bambi will welcome guests into a chic, eclectic space. Minimalist furnishings, neon light installations, and industrial accents will give the space an “otherworldly” feel. “Bar Bambi’s space is meant to feel somewhat magical, like you’re in that special place between day and night, hard and soft, reflection and play,” said Renshaw in a statement. “I want it to feel comfortable but a bit surreal, like you’ve stepped into a dream that still somehow feels at home in the big city of Chicago.” Opening timeline ---------------- Bar Bambi is slated to open in late 2025 or early 2026.
